Life is a Special Occasion!

Today is Memorial Day which is observed on the last Monday of May. Formaly known as Decoration Day, it commemorates U.S. men and women who died while in the military service. First enacted to honor Union soldiers of the American Civil War, it was expanded to include all wars involving United States military, after after WWI.
May people observe this holiday by visiting cemeteries and memorials. A national moment of remembrance takes place at 3 p.m. local time. Another ritual is to fly the flag of the United States at half staff from dawn until noon local time. Volunteers often place American flags on each grave site at National Cemeteries.
Memorial Day weekend is the unofficial kickoff to summer and is often celebrated with picnics, family gatherings, barbecues, weekend getaways, and sporting events.

Today’s pictures are of DS#6 and family marching with their scout troop in last years Memorial Day Parade. I’m pretty sure they’ll be doing the same today, weather permitting.
I’m celebrating by going out to buy some flowers. I’ve put off doing so and the flower boxes are looking pretty empty here. Usually I’d already have them planted with flags flying in honor of the day. Better late than never !
I’m also making up a batch of loaded potato salad to enjoy today along with a hot dog or two and some baked beans for my dinner.
Loaded Potato Salad
2 lbs red potatoes, quartered
1/2 lb. bacon strips, chopped
1/2 c. mayonaise
1/4 creamy Cesar salad dressing
1/4 c. ranch salad dressing
3 tbsp. sour cream
1 tbsp. Dijon mustard
3 green onions, chopped
1/4 c. shredded cheddar cheese
salt and pepper to taste
Cook potatoes until tender. Meanwhile cook bacon until crisp. Remove and drain on paper towels, reserving 3 tablespoons drippings.
Drain potato and place in large bowl. Add bacon and reserved
drippings. Toss to coat. Refrigerate until chilled.
Whisk the mayo, dressings, sour cream and mustard in a small bowl and pour over potato mixture. Toss to coat. Stir in onions, salt and pepper, and cheese. Sprinkle with some paprika, if desired.
Makes 8 servings
We are suppose to have a dry day, low 70’s and no rain. It’ll be great for getting outside filling those flower boxes and putting my flags out.

Great way for your family to honor the day by marching in a parade! That potato salad recipe looks yummy! We are having an unseasonably cool day here in the high 70s. I bet lots of people will be picnicking at parks or at local lakes! Have a great day!

I love a good parade; that's pretty neat that the scouts and their parents still march. Your loaded potato salad sounds refreshing, indeed. I've not made one in years and years.
