Today is National Raspberry Cake Day which makes today as sweet as a summer day can be. Tender raspberries are among the best of fruits that nature has to offer.
The raspberry harvest is going on right now, so it’s only appropriate that we enjoy a piece of raspberry cake in celebration. Here’s a recipe in case you might want to make your own.
Easy Lemon Raspberry Cake with Crumb Topping
1/2 cup butter at room temperature
1 c. sugar
2 large eggs
1 c. sour cream
1 tsp vanilla
2 c. cake flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 c. lemon juice
1 tbsp. lemon zest
2 c. fresh raspberries.
for Streusel:
1 c. flour
1/2 c. sugar
1/2 tsp. lemon zest
1/2 cup butter room temperature
Preheat oven to 350. Grease a 9 inch pan with butter and line with parchment paper
Cream butter and sugar together until light and fluffy. Add eggs, sour cream, and vanilla. Mix until combined.
In a separate bowl combine flour, baking powder, baking soda, and said. Add flour mixture to batter and whisk until combined. Add lemon juice and grated lemon zest.
Pour batter in to prepared pan and spread evenly. Top with raspberries.
To make the streusel topping combine flour, sugar, lemon zest and butter in a bowl until mixture crumbly. Distribute streusel over top of raspberries.
Bake about 60 minutes or until toothpick comes out clean. Let cake rest about 15 minutes before removing from pan and then let cool completely before serving.

For me a celebration should always include cake but today cake is the cause for celebration. I truly do not bake much at all in the summer so if I have cake today, it’s because I bought one at the store yesterday.
Berries are a favorite summer time treat and very often I’ll just put them over the top of piece of angel food cake and top with a dollop of whipped cream. They are very good over a bowl of ice cream too. If you don’t happen to have fresh berries, Raspberry jam is always a good topping on cakes and ice cream and I’ve even found that raspberry jelly donuts will do in a pinch too.
I do love summertime and all the fresh fruits and vegetables that are available.
Although I did the bulk of my shopping yesterday, I hope to get out to the grocery store again today as they have ground beef on sale right now and I’m going to stock up. I’m a sale shopper and always try to take advantage of them.
Otherwise this is proving to be a quiet week here at my house.

I have some blueberries to go on top of my frozen vanilla yogurt!
We are going to start packing up for the ranch but it won’t take long. I’d love to get to the point where I can just pick up my purse and our medicines and book basket and walk out to the truck! Maybe someday. Louis Dean and I bought carry lots of ‘baggage’ with us!
My mom was a sale shopper too; I too look for bargains and stock up as I can. Anyway to save money is a good way to save money. I liked to put strawberry jam over vanilla ice cream. That was a refreshing summer treat!

I will have to get some raspberries to make your cake. It sounds fantastic. We have been enjoying berries all summer. Our strawberries are finished now, but the Scottish raspberries are coming in and the English ones also. We sure love them! When I was a child it was a real treat when my mother would spoon raspberry jam over our ice cream! I, too, love the Julia Child quote. Its right up my alley! Thanks for your sweet posts.
