Today is Paul Bunyan Day which celebrates the gigantic lumberjack of American Folklore. Paul Bunyan and his blue ox Babe lived and traveled around the country and is best known for his logging feats.
According to the stories Bunyan was a huge man with an amazing amount of physical strength. He single handedly found the logging industry, he created Lake Superior with his bare hands and even trained carpenter ants to help him with his tasks.
Today Paul Bunyan is mentioned in more than 1000 books and has become one of the most widespread icons in American culture.
A good way to celebrate today is by eating pancakes. Bunyan was supposed to have eaten 50 pancakes in one minute.

I grew up with tall tales such as those of Paul Bunyan. Although he wasn’t a real person it’s good to learn about the brave men and women that did do a lot to create our great country.
Well I’m all about celebrating with pancakes today. It’s been awhile since I made any and they always hit the spot. I even have some maple syrup to have with them. I always make a big batch when I do make them and then freeze the rest. They heat up well in the microwave oven and will make for a quick breakfast later on too.
I did see a recipe for Paul Bunyan cookies which are supposed to be a healthy alternative for breakfast food.
Paul Bunyan Breakfast Cookies
Makes 18
1 1/4 c. flour
1 tsp cinnamon
3/4 tsp. baking soda
1/2 tsp baking powder
1/2 tsp. salt
1/2 tsp ginger
1/2 c. shortening
1/2 c. sugar
1/2 c. molasses
2 large eggs, lightly beaten
1 pkg. semi sweet chocolate chips
1 1/2 c. old fashion oats
1 c. walnuts chopped
1 c. raisins
Preheat oven to 350 degrees. Sift flour, cinnamon, baking soda and baking power, salt and ginger together.
Cream shortening and sugar until light and fluffy. Add molasses and beat to combine. Add eggs one at a time and mix. Add the floor mixture one cup at at time and stir using a wooden spoon. Stir in chocolate chips, oats, walnuts and raisins.
Using a 2 inch ice cream scoop, drop dough onto a greased baking sheet. Bake about 15 minutes until golden brown. Cool on pan for 5 minutes then remove to cool completely on a wire rack.
These are definitely on my to bake list when the weather is cool enough to turn the oven on. That will not be today as I hope to get the yard work done.

The clouds are moving out today and a heat wave is moving in...
Looks like it was a fun day fishing for your son and his family! I like pancakes too though haven't had them in awhile. That's a good idea to make a big batch and freeze them. They are always tasty!

I remember reading about Paul Bunyan when I was in grade school! (Frankly, I liked the blue ox Babe best.) That's a great idea about using an ice-cream scoop to measure and drop raw dough! Like you, its going to be a few months before we go turning on our oven.
I love pancakes. When I was a second grader at St. Peter's grade school, I had pancakes for lunch daily. I remember walking home at lunchtime one day, and mother was in the basement and no pancakes were ready. I yelled (screamed) down the stairs that i was going to be late for afternoon classes WHERE WERE THE PANCAKES. I'm sure my mother was biting her lip in the basement and she told me to relax and she would get them ready for me. No school lunches in those days. I loved the story of Paul Bunyan and Babe!
Love the photo of your adorable wee fisherman and her "Catch!" So cute! I remember seeing a huge statue of Paul Bunyan an his ox Babe somewhere in the States when we were travelling there when I was a child. It was probably somewhere in Maine. Loved the legend of Paul Bunyan way back when I was a child. Your pancakes look amazing. Sometimes I will treat us to pancakes for supper. Not often, but once in a blue moon! xoxo
