ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

THOUGHT FOR TODAY
Life is like an onion; you peel off one layer at time and sometimes you weep.
Carl Sandburg
I do love onion rings and also like a lot of fried food. Fried foods are not supposed to be all that good for us so I often do oven fried instead of deep fried. I looked to see if there was an oven fried onion ring recipe and this is what I found. I haven’t tried it out yet, but sounds pretty good.
Crispy Baked Onion Rings
Makes 6 servings
2 large Vidalia onions
3/4 c. flour
4 egg whites
2 Tbsp mayonaise
1 c. Italian style bread crumbs
Cooking spray
Preheat oven to 425 degrees. Spray a baking sheet with cooking spray.
Slice onions to 1/2 inch wide rings and place in a bowl of water.
In medium bowl, whisk together flour, 1 tsp. said and 1/4tsp. pepper. In a second bowl, whisk egg whites and mayo. Add the bread crumbs to anther bowl. Remove each onion ring from water shaking off excess and place int to flour, tossing until coated. Next dip the onion ring in egg white mixture until coated then into the bread crumbs, pressing formal onto all sides of onion ring. Place the onion ring on prepared baking sheet and repeat the coating process with remaining onion rings.
Thoroughly spray the onion rings with cooking spray to help them brown more evenly. Bake for 10 minutes then flip over and bake additional 5 mins until golden brown and crispy. Serve immediately with dipping sauce.
I’m trying to make Fridays my fun day around here so having some onion rings will be my fun today. They are a treat and something I rarely have. Who knows what else I might get up to, I try to just keep it simple and make it fun.
Today’s pictures are courtesy of DD and her family. They were on vacation by Lake Erie last week and had a great time.
I hope you all have a FANTASTIC Friday!
COUNTING MY GIFTS
Happy is said to be the family which can eat onions together. They are, for the time being, separate from the world, and have a harmony of aspiration.
Charles Dudley Warner

ADVICE FOR TODAY
An onion can make people cry but there's never been a vegetable that can make people laugh.

It's a rainy day so I'm doing my best to make my own sunshine today !
I love onion rings, but even though I live in Georgia, I'm not a fan of Vidalia onions, which are grown here. They're too wimpy for me.
I hope those oven-fried rings turn out well, but I have my doubts. I've been oven-frying chicken for a long time, but I'd been craving really good deep-fried chicken for almost as long, but like you, I know the whole deep-frying thing isn't good for us. So a friend recommended an air fryer. She said she loved hers. I asked if fried chicken done in one of them actually tasted like fried chicken. She assured me that it did, so I bought a nice big air fryer. Hmmmmph! Didn't taste at ALL like real fried chicken. The skin didn't crisp, and that's the best part of fried chicken! I have a recipe for doing onion rings in the air fryer, too, but I haven't tried it yet. Maybe today would be a good time to give it a go. Seeing's as how it's Onion Rings Day and all. :)
I like onion rings too! That's a good idea ot make Fridays a fun day; good start for the weekend!

I love onion rings! Please, won't you let us know how the oven version turned out?
These Lake Erie images are heartwarming, indeed. So Americana!
