I know of no brighter smiles than that of my grandchildren so the pictures today are of just a few of them and their brilliant smiles. They certainly always brighten my days. A few more end of the school year pics, I think everyone is out for the summer now!
I think we all pretty much feel that way about our loved ones. Their smiles let us know they are happy and that makes us happy. They really are contagious.
We have another sunny day here and that always makes me smile too ! There are going to be some hot days ahead with temps close to 90 degrees so I’m going to be taking advantage of my left overs in the freezer this weekend so won’t have to cook. I have leftover chili which I’m thinking will make a nice taco salad and leftover pulled pork for some barbecue pork sandwiches and I’m putting together some banana pudding for dessert. Easy peasy eating for me.
For the salad I put cold lettuce in a bowl and sprinkle with cheddar cheese and chopped tomatoes. Then top with a handful of broken corn tortilla chips and pour a cup of chili over the top.

I like the idea of the taco salad. We do something similar, not with chili, but we brown ground meat with taco seasoning in it and then put it over a bed of lettuce and tomatoes along with either black beans or kidney beans, olives, cheese and crumbled up tortilla chips. For dressing we use a French dressing, which really makes everything taste so delicious!

I like this version of a summer 'no fuss' taco salad. During the summer months it would like some doing to turn on the oven!
