Today is Fresh Veggies Day which is a day to eat healthy with fresh veggies at every meal and for snacks too.
Fresh vegetables are tasty and also healthy and highly nutritious. This time of year, they are plenty of vegetables at your local grocery store or in your backyard vegetable garden.
So relish the day and enjoy some fresh picked veggies.

It’s difficult to think anything but pleasant thoughts while eating a homegrown tomato.

It won’t be long now and I’ll be heading out to our local vegetable stand to get some fresh corn on the cob. They usually have it available right around the 4th of July. Just in time for holiday picnics and barbecues. And I always look forward to the first fresh tomato of the season too. They are always so much better tasting than what I get at the grocery store. A tomato sandwich with mayo is delicious.
This is the time of year I eat more fresh fruits and vegetables than any other time of year. When the weather heats up I enjoy more salads than when it’s cold out. When it’s cold I eat more soups and stews. I still get my veggies, only in a different way.
One of my favorite ways to enjoy veggies is on Veggie Pizza. I don’t usually make it unless I have some company to share it with because this recipe makes 32 servings.
Easy Crescent Veggie Pizza
2 cans refrigerated crescent dinner roles
1 package, 8 oz. cream cheese, softened
1/2 cup sour cream
1 tsp. dried dill weed
1/8 tsp garlic powder
1/2 cup small fresh broccoli florets
1/3 cup quartered cucumber slices
1 plum tomato, chopped
1/4 cup shredded carrots
Heat oven to 375 degrees. Unroll cans of crescent rolls and separate into 4 long rectangles. Place in a 15 by 10 by 1 inch pan and press in bottom and up sides to form crust. Bake about 15 minutes or until golden brown. Cool completely.
In a small bowl, mix cream cheese, sour cream, dill and garlic powder until smooth. Spread over crust. Top with vegetables. Serve immediately or cover and refrigerate 1 to 2 hours before serving. Cut into 8 rows by 4 row squares.
We have had a couple of beautiful days with sunshine and low humidity here. There’s been a gentle breeze blowing too and no air conditioning has been needed. Nice to have some fresh air blowing in the windows. Today and tomorrow may be quite different though as temps are rising and by Sunday we will be in the 90’s. That’s unusually hot for us so I’m sure to close up the windows and turn the A/C on.
The tomatoes pictured below were from DD’s garden last year. Hopefully there will be more coming my way this year.

Home grown tomatoes are the best !

We've been dieting so we've been eating lots of fresh veggies. So tasty and so good for our bodies!

We have corn on the cob that I need to shuck so the goats can eat the husks! The horses and goats both loved these! Yesterday I had a sack of scraps for the goats after Louis Dean brought them back to the pen but one of the horses saw the bag and ate it all while I was tending to the chickens!
We have a ‘Tomato Man’ I call him up on hwy 84 on our way to Waco. His name is Bill and he’s an older guy who sits in the shade under a blue tarp selling fresh tomatoes, squash and such. I haven’t seen him yet this year but we will look for him when we go to town on Monday. I hope he’s there. He’s not as old as Louis Dean.....I think he was 75 last year when we would stop and visit and buy some of those delicious tomatoes. But he uses a small portable walker and is not in good health. He looked frail. It will be so good if I can see him again!
I woke up warm this morning. Louis Dean has turned the AC off and opened the camper door. Hmmmmm ....he and I need to have a little talk!

Tomato Sandwich: 2 slices of bread, slices of FRESH tomatoes, mayo and salt and pepper.
That is IT! The best lunch in the world but the tomatoes must be home grown!!

Only in the last few years have I learned to like tomatoes! Tom bought a couple (what he calls "Big Boys") at a produce stand the other day and enjoyed them with sour cream atop each slice.
