When I was young I’d dream of the day when I had a large family and I can tell you that dreams do come true. My family wasn’t quite as large as I’d planned, as I wound up with only 7 instead of a dozen. The dream was more than I imagined and even now when I’m older those children of mine are a gift to be treasured.
These days my dreams are not quite as high as they were when I was young. Right now I’m dreaming of Spring and warmer days. It’s a good dream but there is not much that I can do about the weather. My attitude is one thing I can control so I’m doing my best to keep positive on the cold and dreary days.
This is Martin Luther King weekend and many get a 3 day weekend. Martin Luther King is famous for his speech about having a dream. So today’s holiday is appropriately timed. It is good to have a dream and work towards making them come true.
The pictures today are of the calm before the storm. All the had snow melted. I did take down the Christmas wreath finally and the car got power washed in the rain we had. Yesterday evening and through the night we did get several mare inches of new snow.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Peach Melba Day. Peach Melba is a dessert of peaches and raspberry sauce with vanilla ice cream. The dish was invented in 1892 or 1893 by the French chef Auguste Escoffier at the Savoy Hotel, London, to honor the Australian soprano Nellie Melba.
This dessert recipe is one you can make all year round as you can use frozen raspberries and tinned or frozen peaches.
Yummy Peach Melba Cobbler
1/3 c. sugar
1/4 c. water
1 tbsp. cornstarch
2 c. sliced peaches
1 1/4 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 c. sugar
3 tbsp. butter, melted
1/2 c. half and half creamer
2 c. raspberries
2 tbsp.sugar
2 tbsp. sliced almonds
vanilla ice cream if desired
Heat oven to 350 degrees. Mix 2/3 cup sugar, cornstarch and water in a 10 inch oven proof skillet. Stir in peaches until coated. Heat over medium heat 5 to 10 minutes, stirring occasionally, until syrup thickens and peaches are tender.
Meanwhile, mix flour, baking powder, salt and 1/4 cup sugar in medium bowl. Drizzle butter and half-and-half over flour mixture; stir just until combined. Place dough on floured surface. Press or roll into 10 inch round, about 1/8 inch thick
Gently fold raspberries into peaches. Heat to boiling over high heat; remove from heat.
Fold dough in half to make handling easier; place over fruit mixture and unfold, easing to fit. Sprinkle top with 2 tablespoons sugar and the almonds. Bake 20 to 25 minutes or until top is light golden brown. Cool 15 minutes. Serve warm with ice cream

Almost two weeks past New Years, "Make-Your-Dream-Come-True" day is sure a timely booster. Would you believe, it's still too warm here (78) to consider turning on our oven. This house with the vaulted ceilings is difficult to keep cool.
PS - When I was young I wanted 6 children and would spend hours playing/experimenting with their first (and middle!) names.
Dreams do come true! at least some of them. I love the scripture about God giving us the desires of our hearts....
