Today is Martin Luther King Day. Born on January 15, 1929, Martin Luther King Jr. grew to become one of the greatest Social Activists the world has ever known. At 35, he became the youngest person to win the Nobel Peace prize. He was assassinated on April 4, 1968 while making a speech from the balcony of his hotel room in Memphis, Tennessee.
His birthday became a National Holiday by an act of Congress in 1983. Many consider it a day to serve your community.

This is one of those Monday holidays that often gives people a 3 day weekend to enjoy. For me
it’s business as usual. Another day here at home with some laundry to do as well as some cleaning to be done. There may also be a little snow shoveling in the mix as more snow is headed our way.
This week I hope to get my craft nook sorted out and make some plans for future projects. I’ve plenty to do but need to make sure I have what is needed to get them done. My nook is located in the back of my spare bedroom which also needs a good sorting out as it has become a good place to stick things out of the way.
Today’s pictures are of the picnic baskets I painted for my family’s Christmas gifts this year. The are all antique and as picnics were always a part of our life, I thought they’d enjoy them. There are many things they could be used for besides a picnic too.
Winter may keep me indoors, but still there is never a dull moment. Truthfully, there is more to do than I’ll probably ever get done. I rest more than I work so things take longer to get done. That is life in the slow lane.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Strawberry Ice Cream Day. They say that strawberry is the third most popular ice cream flavor proceeded by vanilla and chocolate.
Strawberries are available in the grocery store year round. Almost all of our berries come from Central and South America in the winter months, but the U.S. does manage some strawberry production, mainly out of Florida and Southern California.
I found this easy to make recipe that just might be great to serve for Valentines Day which is just right around the corner.
Strawberry Ice Cream Oreo Pie
1/2 gallon Strawberry Ice Cream softened
8 to 10 Oreo cookies, chopped
1 Oreo Cookie crumb crust
Whipped Cream and strawberries for garnish
In a large bowl, stir ice cream and chopped cookies until blended. Spoon ice cream mixture into crumb crust
Cover and freeze 4 hours or until firm. Remove from 10 to 15 minutes before serving.
Top with Whipped Cream and sliced strawberries.
COUNTING MY GIFTS
