Today is National Bird Day. People love birds. Bird watching is a favorite pastime of millions of people. It is the most popular of hobbies, and can be enjoyed by everyone regardless of age. With this popularity, it comes as no surprise that there is more than one day established to recognize, appreciate, and enjoy birds. Feed the Birds Day will be coming up soon on February 3rd.
Since the late 19th century, bird protection has become an increasingly important issue. Birds are among the most popular animals in the exotic pet trade, and most birds in captive breeding programs are kept there solely for commercial gain. Today, bird enthusiasts and activists around the United States are asked to take action on behalf of captive birds.

I do love to watch the birds, but since I moved really haven’t got many pictures of them here. We have a lot of blue jays which seem to really like the acorns that fall from the huge oak trees around here. No need for a feeding station in their case, they lay on the ground in abundance. But with snow covering everything it’s getting harder for them to find them. The squirrels are having no difficulty though. They dig them up with little effort.
In the spring I’ll see lots of robins too. There are always some in the yard. They remind me of my mom as she loved watching them.
About the only thing these cold January days is good for is staying inside and I am doing a good job of that. The pantry is stocked so there is no need to go out. I should turn the oven on and bake something so I’ll have a dessert on hand for the weekend. It’s a very good day to turn the oven on.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Whipped Cream Day! Whipped cream has been around for ages. But it was in 1946, when the aerosol can was first invented by Aaron Lapin, that sales and popularity of this dessert delight really took off. Whipped cream has continued to transform desserts and hot drinks from the merely ordinary to something truly special.
Whether one likes whipped cream squirted straight out those nifty aerosol cans, or prefers the more traditional version of whisking cream by hand, whipped cream is truly one of those little delights in life that deserves a bit of praise and recognition.
STABILIZED WHIPPED CREAM
This whipped cream is sturdier than normal, and will not get runny or melt with time. Stabilized whipped cream keeps well in fridge for days!
Makes about 4 cups
2 cups heavy whipping cream, very cold
4 TB powdered sugar
2 TB vanilla extract
2 tsp unflavored gelatin powder
2 TB water
Pour cold heavy whipping cream, powdered sugar, and vanilla extract in a large metal bowl. Place bowl and whisks of electric mixer in fridge for 5 to 10 minutes to make everything cold.
Meanwhile, combine gelatin powder and 2 TB water in a small glass bowl. Once water has been fully soaked up by the gelatin, microwave the mixture for 15 to 20 seconds. It should become a thick, hot liquid. Stir well and let sit at room temp.
Remove the bowl from fridge. Beat on medium high until soft peaks just start to form. Set whipped cream aside and check the gelatin mixture. It should be a slightly warm liquid, but not hot. Resume beating whipped cream, while steadily pouring liquid gelatin right where the whisks are beating, to ensure it is being fully incorporated.
Beat whipped cream to stiff peaks.

My DH likes to make his own (from scratch) whipped cream, as well.
... and just yesterday, another blog friend posted how she's incorporating whipped cream (OK, Cool Whip) in her diet plan by freezing it and eating it like ice cream.
I love the birds as you know Pam. We feed them all year round and feel no guilt in doing so. They seem to need it more in our urban setting. We mostly get Starlings, the odd robin, blackbirds, and of course sparrows. We used to get a lot more varieties when we lived out in the country. When I am tempted to think they are only sparrows,I always remind myself of how important Sparrows are to our Heavenly Father. They are mentioned so much in the Bible and then there is my favourite childhood hymn, God sees the little sparrow fall. I hate seeing birds in cages. They need to be free as God intended! I’ve tried to keep all 4 bird feeders full here! We love watching them! A wren got in the house the other day and was captured and returned outside. He flew right back in n!
