Today is National Tin Can Day which honors Ezra Dagger and Thomas Kensett who received the U.S. tin can patent on this day in 1825. Tin cans revolutionized the storage of perishable foods and are part of virtually everyone’s lives. They changed the way we store food and allowed for safe, long term storage of many foods.

I use a lot of food that comes from tin cans. My pantry cupboard is full of all kinds of food from beans to tuna, peaches to tomatoes and more. It’s the easiest way for me to store food. Some prefer frozen vegetable and fruits, but my freezer is small so that is not an option for me.
Of course fresh foods are always tastier, but the growing season in Ohio doesn’t last long at all. While most everything is available from the grocery store, it just isn’t as tasty as when it’s fresh picked locally.
I used to can my own fruits and vegetables in jars, but that was years ago. Today the convenience of tin cans has taken over.
We’re to get another sunny day here and I’m hoping it will melt the layer of ice on the driveway. A second January thaw has come our way and I’m thankful for it. Anytime we get temps above freezing in January is a blessing.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Popcorn Day which celebrates healthy, until you load it with butter and salt, and addictive popcorn. Americans eat about 16 billion quarts of popcorn each year. This equates to about 51 quarts per person, which makes it one of the most popular snacks in the country.
I love popcorn and make it often. I’ve discovered a no fail way to make homemade popcorn and never use the microwavable kind anymore.
Simply put 3 tbsp oil in your pan and let it heat. Add a few kernels to the oil and when one pops you’ll know it’s reached the right temp. Add 1/2 cup popcorn and cover pan. Over medium heat let corn pop, while shaking the pan, until you don’t hear a popping sound then empty into a bowl for serving. I melt 1/3 stick of butter in the hot pan used for popping then drizzle butter of popcorn and sprinkle with salt to taste.
I’ve been using Boy Scout popcorn for years and it’s delicious.

Like you Pam, I have a store cupboard filled with tinned vegetables, meats, fruits, etc. I wouldn't be without them. I also don't have a lot of freezer space. When my children were growing up I used to freeze and can a lot of fruits and veg, but with just the two of us now, it just isn't practical. OH, I love popcorn. I wish my teeth enjoyed it more! Of course it plays havoc with my diverticulitis as well, so I can only enjoy a few rare pieces! but I did always love it so much. Sigh. . . Have a wonderful Friday. I don't have a freezer any more and I miss it terribly. I keep trying to talk my Dad out of one of his 2 small ones, but he's not ready to let go. So, I too have a good store of canned food - beans, tuna, tomatoes, pineapple. And the tiny freezer on my refrigerator is always chock a block full as I still like to prepare my weekly meals on the weekends. And yes, I'm enjoying the shorter days though it's still pretty dark out there when I get home after work. Today, I get to enjoy an afternoon off and take a walk in what I hope will be sunshine.
I love browsing the canned food aisles anymore ... there's so much variety nowdays!
Popcorn sounds mighty good right about now; in fact, it's what's for THIS girl's supper.
