Today is National Pharmacists Day which is a day set aside to recognize all Pharmacists for their hard work as an integral part of our medical care system. Pharmacists also known as chemists or druggists are healthcare professions who practice in pharmacy, the field of health sciences focusing on safe and effective medication use.
Pharmacists undergo university level eduction to understand the action of drugs, drug uses and therapeutic roles, side effects and monitoring parameters. They interpret and communicate this specialized knowledge to patients, physicians and other health care providers.
Today and every day it’s good to say Thank You for all their hard work, dedication and compassion.

Thankfully I do not take prescriptions on a daily basis but in the past few years I have gone to a pharmacy for my annual flu shot. They make it very convenient to get one . Many people do depend a their druggist to provide the medication they need and pharmacies seem to be around every corner these days. Our town has several providing services for those that need them and most go to the one that there insurance has chosen to cover.
On the bright side, my supplemental health insurance has now included the Silver Sneakers program. If you remember I went swimming with one of my friends this past summer as her guest with her Silver Sneakers privileges. Now I can go on my own too. They say that exercising in the water is easier on our bodies, especially older people like me and I’m looking forward to participating soon. When the weather improves it’ll be nice to get out for a swim in a heated pool that is indoors. I can certainly use the exercise.
Speaking of the weather it is not sounding good at all for the weekend. Most of our snow and ice melted yesterday but more is to come our way. We’ll start with freezing rain changing in to snow and it's to be colder so what ever we get will stick around for a while. Today’s pictures were taken on Wednesday and show the snow melting along with the remaining ice on our road and driveway at that time. I wasn’t sad at all to see it go.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Curried Chicken Day which is a popular dish in Asia, the United Kingdom and the Caribbean. This is one meal I have rarely had so I looked for something simple and easy that I might like and this is what I found.
This dish is made all in one pot, even the rice, and can easily be customized to personal preference. You can always increase or decrease the curry amounts as well as things such as the garlic, ginger, salt and pepper.
One Pot Chicken Curry
3 1/2 tbsp. oil separated
2 1/2 c. boneless skinless chicken breast
4 tsp. mild curry powder, separated
Salt and pepper
1 cup red pepper chopped
1 cup snap peas, tops removed
2 tsp. minced garlic
1 tbsp. ginger
1 helping tbsp.cornstarch
1 1/2 tsp. sugar
3 c. chicken broth, separated
1 c. white rice
1/3 c. sour cream
finely chopped cilantro, optional
fresh naan, optional
Slice the chicken into small and thin chunks. Rub the chunks evenly with 2 tsp. curry powder and salt and pepper.
In large pot add two tbsp. oil over medium heat. Add chicken chunks and still around until no longer pink on the outside, about 5 minutes.
Transfer the partially cooked chicken to a plate. In the same pot, add remaining 1 1/2 tbsp. oil. Stir in the garlic and ginger stirring until fragrant over low heat then add the red pepper and snap peas.
Cook and stir until slightly tender, about 5 minutes then add remaining 2 tsp. curry powder.
Whisk the cornstarch into 2 cups of the chicken broth until cornstarch is dissolved and pour the mixture over the vegetables. Allow to come to a boil and then reduce the heat to allow it to slightly thicken.
Add the chicken along with the rice sugar and remain 1 c. of broth. Bring to a boil once more and then reduce the heat to low and cover.
Allow to cook until rice is tender and the chicken and veggies are all cooked through.
Season with salt and pepper and additional curry powder if desired. Stir in the sour cream and serve immediately. Add chopped cilantro and serve with fresh naan if desired.
In case you don’t know, naan is a flat bread that goes well with curry.

Your yard looks much better than mine. I should have raked the leaves last fall a little better. I have always replied to your emails, now I see that's not the proper way to comment, maybe you could let me know.
It doesn't even feel like winter here today. Just wet. I'm sure you'll be fine, no matter whether you get more snow and ice or not. Your sunny disposition will keep you nice and toasty.
I enjoy the few times I've tasted curry ... but have never tried cooking with it.
So true about pharmacists deserving of our thanks. When I was a little girl I told my parents that's what I wanted to be someday ... then I discovered you needed to be good in science and math. (sigh) If I/we've a medical question, I'm far more likely to consult a pharmacist and see if he/she recommends a doctor.
