Today is Groundhog Day which is celebrated in the U.S. each year on February 2nd. On this day in midwinter, the groundhog awakens from a long winter's nap, and goes outside of his den to see if he sees his shadow.
According to legend, if the groundhog sees his shadow, there will be six more weeks of winter. He then returns to his den and goes back to sleep. If however, he does not see his shadow, he plays around outside of his hole for a while. If he does not see his shadow, spring is just around the corner.
The tradition is based upon Candlemas, the day that is the midpoint between Winter and Spring. A famous Candlemas poems goes:
If Candlemas be fair and bright,
Winter has another flight.
If Candlemas brings clouds and rain,
Winter will not come again.
If you can't see the Bright Side, polish the dull side

No matter what the Groundhog says, I’ve learned that there is usually always 6 more weeks. But it’s great to think that we only have 6 weeks of winter left. I’m so looking forward to spring.
Although I do tend to hibernate like the groundhog and stay here at home a lot, I’m anxious to be outside and be in the fresh air once again.
We can’t control the weather, but we can control ourselves. We can control what we think and how we see and feel about life. We can control our attitude and the way we react to things.
Thankfully DS#1’s surgery went just fine yesterday and I do thank you all for the many prayers. Further diagnosis and treatment will be determined in the days to come.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Crepe Day which encourages us to enjoy the absolute delicious bit of airy breakfast, lunch, or dinner that is the Crepe. There’s so many ways to prepare them. A crepe is a light bit of flavor wrapped around an amazing filling. That’s the magic of crepes, they can be anything!
This recipe yields a stack of 20 thin, delicious crepes that are the perfect blank canvas for any sweet or savory filling you can dream up, from mushroom and Swiss to Nutella and raspberries.
Basic Crepes
4 eggs
1 1/3 cups milk
2 tablespoons margarine or butter, melted, or oil
1 cup all purpose flour
1/2 teaspoon salt, if desired
In medium bowl, beat eggs slightly. Add all remaining ingredients; beat until smooth. Heat crepe pan, or 7 or 8 inch skillet over medium high heat until hot. Grease pan lightly with oil. Pour scant 1/4 cup batter into hot pan, immediately tilting pan until batter covers bottom. Cook until edges start to dry and center is set. Turn to brown other side. Fill with desired filling.

Glad to hear your son's surgery went well! I hope he'll be out of the hospital soon and recovering fully! I'm looking forward to more light in the mornings and evenings as we approach spring :)

Groundhog day is always a fun day. The sun is shining brightly here on Fleming Street this morning. There will be a Groundhog movie marathon on one of the channels, maybe he will watch that if he has cable.

DH and I don't usually dine together on weeknights, but I may dig out my 'special' skillet this weekend and make crepes. No I don't usually cook, but many years ago I signed up for cooking lessons at this 'foo-foo' restaurant in Tampa. Crepes was the only take-away at which I didn't FAIL. LOL.
