Today is Abraham Lincoln's Birthday, however, in modern times, we celebrate Lincoln, and all of the U.S. Presidents, on President's Day.
President Abraham Lincoln was the 16th President of the United States. Honest Abe, as he was commonly known, was born in the wilderness country of Hardin County, Kentucky on February 12, 1809.
Abraham Lincoln became president in 1861. Although he hated war, he was drawn into it as he believed it was the only was to save the nation, after the southern states declared their secession from the Union.
In addition to serving as president during the civil war and saving the Union, Lincoln wrote the Emancipation Proclamation that ended slavery in the U.S. forever.
Shortly after the war ended, Abraham Lincoln became the first U.S. President to be assassinated. He was shot and mortally wounded on Good Friday, April 14, 1865 by John Wilkes Booth in Ford's Theatre.

THOUGHT FOR TODAY
Better to remain silent and be thought a fool than to speak out and remove all doubt
Abraham Lincoln
I think it is important to remember our Presidents that did so much good when governing our country. Abraham Lincoln is a good example for all to follow. The following are a few of his words that I found featured in quotes for today that give a lot of good advice.
Leave nothing for tomorrow which can be done today.
Whatever you are, be a good one.
Every man’s happiness is his own responsibility.
The best way to predict your future is to create it.
In the end, it’s not the years in your life that count. It’s the life in your years.
All said by Abraham Lincoln.
I love this man’s way of thinking. Words of wisdom for sure!
This is a well deserved day of rest for many of us in my family. This past week was a very busy one. Next week promises to be another, so rest and refresh today!
I hope you all have a RELAXING Sunday!
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Plum Pudding Day
I know the picture above is of strawberries and not plums, but it’s the only cake picture I have to share. Plum pudding is a mouthwatering treat that, surprisingly enough, contains no plums! In the 17th century when it was first created, plums referred to raisins or other dried fruits. Plum pudding is a steamed or boiled pudding usually served during the holiday season.
Plum pudding is composed of nutmeg, raisins, nuts, apples, cinnamon, dates, and many other ingredients. In England, it is tradition to have every person in a household simultaneously hold onto the wooden spoon together to help stir the batter. As they stir they also have to make a wish!
Pudding is a delicious dessert, so I looked to see if I could find an easier modern day Plum Pudding recipe.
PLUM PUDDING CAKE
1 cup flour
3/4 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1 cup brown sugar, packed
4 tbsp. vegetable oil
1/2 cup whole milk
2 1/2 cups sliced Italian plums
1 cup boiling water
Preheat oven to 350°F. Grease an 8 inch square baking dish.
In a mixing bowl, mix together flour, sugar, baking powder, salt and cinnamon. Stir in brown sugar.
Combine oil and milk. Stir into the flour mixture.
Pour into pan or casserole, arrange pitted and sliced plums on top.
Pour boiling water evenly over the entire batter. Do not mix!
Bake for about 60 to 70 minutes or until a toothpick inserted in center comes out clean.
COUNTING MY GIFTS
To ease another’s heartache is to forget one’s own.

Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.

Embarrassed to admit, I didn't realize some of these were President Lincoln's own words! In particular I like, "Whatever you are, be a good one." That sounds like something Zig Ziglar once said.
