Today is National Battery Day which gives us an opportunity to celebrate a vital invention. Batteries are used everywhere, from smoke alarms to headsets. They come in all sorts of shapes, sizes, and power capacity, to fit a wide array of needs.
Just imagine where the world would be without batteries. We'd still be using a crank to start our automobiles. We'd have to cart around long extension cords to bring the boombox to the beach. And, forget about hand-held games. They'd never be popular tied to an electrical outlet.
Batteries are electrifying!
Today is a good time to appreciate the power of batteries in our everyday life.

There is no doubt about it I do use a lot of batteries here at my house. The rechargeable ones are nice but a little more pricey than the others.
Sometimes we need to recharge our own personal batteries too and that’s what I’m doing today. Taking a day to get away from work here at home and going shopping.
It’s warming up in the 50’s today and from the looks of the long range forecast, we’ll stay warmer all next week too. 50’s and even 60 will make for a nice break from winter here.
Today’s pictures are of what I hope will be my new home. The kitchen even has a dishwasher which is something I’ve not had in quite a few years. Nothing is definite yet, but the appraisal has been done for the sale of this house, now I’m waiting to see if everything works out.

Today is Crab Stuffed Flounder Day
I do love seafood and this is one dish I need to try out. I’ve not been doing much cooking lately but when things settle down here, it’s on my list of things to make.
Crab Stuffed Flounder
2 flounder filets, 2 or 3 pounds
1 tbsp olive oil
1 tsp butter
2 celery stalks, diced
1/2 red bell pepper, diced
1/2 large onion, diced
8 ounces lump crabmeat
Spice mix: cayenne pepper, garlic powder, onion powder, paprika, to taste
2 tbsp mayo
1 large egg
2 ounces Panko bread crumbs
Preheat oven to 350 degrees.
Saute celery, red bell pepper and onion in oil and butter in pan over medium high heat until the onions are translucent. Remove and set aside.
Add lump crab to a large bowl and stir with 1 tablespoon of spice mix. Add sauteed vegetables, mayo, egg, and Panko bread crumbs. Stir to combine.
Remove center bone from flounder filets and season fish with salt and pepper. Place half the crab mixture on one end of the flounder and roll the fish up, keeping the seam side down. Sprinkle with spice mix and saute for 2 minutes in hot oiled pan. Transfer pan to oven for an additional 3 to 4 minutes, or until the fish is cooked.
Place the other half of the crab mixture on top of your second flounder filet. Place in oven safe pan and cook in oven along with the other filet.
Makes 2 servings

I like your potential new place. I like the brightness of the kitchen. Hope it continues to go good with your house sell.

That screen room/lanai looks mighty inviting! ...That was my mother's favorite spot to sit and read.
I'd like to try that flounder dish this summer, using that faux crab meat ...or, perhaps diced mushrooms. (Poor DH has to pay the price sometimes for my shellfish allergy.)
