Today is National Tortilla Chip Day which is a holiday with a crunch. One might even suggest that it is a corny holiday. Just a few decades ago, Americans seldom ate Corn Chips and Salsa. It's popularity has grown immensely. Today is a tribute to that rising popularity of one of America's favorite munchies.

When I used to work, Friday was the best day of the week. I guess it was the happy anticipation of a weekend off. Now every day is a day off but still it’s great to wake up and feel the anticipation of a new day. I always try to remember that all though every day may not a good one, there is some thing good to be found in every day!
There will definitely be some exciting days ahead and knowing that I’m packing up now to move for sure makes it all worthwhile. The past few months have been full of waiting and wondering what might happen. Now at least, I can make some definite plans and hopefully will be moving in just a few short weeks!
I’m trying to take it all one day at a time as when I let my thoughts race ahead, it’s a bit overwhelming. Today I’ll do what needs be done and then little by little it will all get done.
We are to be very warm here today but the 70 plus degrees that we’ll enjoy won’t be lasting long. They say there will probably be some thunderstorms moving in tonight and then we’ll cool down. Meanwhile we have today to enjoy. It’s like having a mini Spring Break.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
In honor of Corn Chip Day, I found a new recipe for a dip to have with them, so I thought I’d share it with you all today
Chicken Burrito Dip
1 cup chopped onion
1 tablespoon chopped garlic
2 cups shredded rotisserie chicken
1 1/2 cups canned black beans, rinsed
1 cup frozen fire roasted or regular corn, thawed and drained
1 cup red enchilada sauce
1 medium canned chipotle in adobo, chopped, plus 1 tbsp. adobo sauce
2 teaspoons ground cumin
3 cups shredded Monterey jack cheese
Sour cream and chopped fresh cilantro, for garnish
Corn chips, for dipping
Preheat the broiler. Heat a medium cast iron skillet over medium. Add the onion and garlic and cook, stirring often, until the onion is charred in spots, about 5 minutes. Stir in the chicken, beans, corn, enchilada sauce, chipotle and adobo sauce, cumin and half the cheese. Increase the heat to medium high and bring to a simmer; remove from the heat.
Sprinkle with the remaining cheese. Broil until brown and bubbly, 3 to 5 minutes. Garnish with the sour cream and cilantro. Serve with the corn chips.

So true to take it little by little and it will all get done. Just focus on what you want to accomplish that day and try not to worry about tomorrow's work. My step granddaughter just got braces, so no tortilla chips for her for 2 years. That was a favorite of hers with salsa.

Wow ... you're already in the 70's?! Here in Phoenix I'm enjoying every minute of our (rare) 65-degree days. Our weather patterns this year are surely bi-polar.
Corn chips/tortilla chips are seriously my Achilles heel. I love them so much, but can't make myself eat them in moderation. This dip sounds particularly yummy with the chicken.
