This holiday encourages us to take the opportunity to use that hour for personal growth, relaxation, and basically just taking care of ‘me’. Especially in today’s society where time is constantly marching on and we’re heavily connected to everything, finding a little time to disconnect is absolutely vital to keeping ourselves physically and emotionally fit.
Take an hour out of your day today, and settle in to relax and truly take care of yourself. Whatever it is your soul needs, Zero Tasking Day is your chance to take an hour and do it.

I hope you all remembered to turn back your clocks and got an extra hour of sleep. I for one appreciated getting back that hour I lost last Spring.
Sundays are the perfect day to take some time just for yourself. It’s always my day of rest and relaxation. It’s more than an hour but a whole day for me. Whatever work needs done today will wait for tomorrow.
We all need to take time for ourselves to renew and refresh our bodies, minds and souls.
I’m slowly waking up here this morning and sipping my good cup of coffee. Later on this morning I’ll be off to church then home for the rest of the day.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Nachos Day!
Sometimes they’re hot and spicy. Sometimes they’re cheesy. Sometimes they make a mess everywhere. But one thing is certain: they’re delicious, and a favorite in many parts of the world.
Here is a simple yet delicious recipe for homemade nachos:
serves 4
1 large bag of corn or tortilla chips
8 oz Jack cheese
8 oz Cheddar cheese
A large jar of your favorite salsa
A handful of pickled jalapeño slices, optional
Preheat your oven to 200 degrees. Arrange the chips in an oven safe dish. Spread the chips out. Next, grate the cheese, and mix both kinds well. Spread the grated cheese evenly over the chips. Spoon the salsa over the cheese covered chips, and then sprinkle the jalapeno slices overtop of everything. Bake until the cheese has melted and starts bubbling, about 10 to 12 minutes, taking care to make sure the nachose don’t start burning. After you remove them from the oven, wait about 1 minute before you dig it. It may seem difficult to wait, but waiting is still much better than burning your mouth, tongue and throat with nearly boiling cheese. Serve while still very warm, and enjoy!

MA, I have been absent too long.... time is so precious, I know that so well.
I am taking time to smell the roses.
Sunday is my day of rest, too, though I try to go to mass on Saturday afternoon. Then I have a calm day to do as I wish, and not rush around "taking care of business".
