I was able to go to this little granddaughter’s party yesterday. It was a double birthday celebration as her younger sister has a birthday this month too and they celebrated together. The pictures today are from last year, I’ll have this years party pictures to share with you later on.
Today is also World Kindness Day which encourages us to be kind to others, helping to create a nicer, better world.
According to the World Kindness Movement website, World Kindness Day is intended to build a kinder and more compassionate world.
Use today as an opportunity to be kind to family, friends, neighbors, and others. You will find kindness rubs off on others, and generates even more kindness.
Don’t forget to be kind to yourself today too! Relax, refresh and renew. The week ahead will be another busy one.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Indian Pudding Day!
This day honors a cold weather classic, which is a traditional New England dessert. In the seventeenth century English colonists brought hasty pudding to North America and completely transformed it. Although it was initially made with wheat, they substituted cornmeal due to a shortage of the grain at the time. The colonists had learned how to cultivate maize from the American Indians. Indian pudding was derived from their name for cornmeal, Indian meal. Milk was substituted for water, and they added either molasses or maple syrup along with cinnamon, ground ginger, butter, eggs, raisins and nuts. Indian pudding is then slowly baked for several hours, transforming its texture from the original porridge like quality of hasty pudding to a much smoother texture which is more typical of custard.
Crock Pot Indian Pudding
3 cups milk
1/2 cup cornmeal
1/2 teaspoon salt
3 eggs
1/4 cup light brown sugar
1/3 cup molasses
2 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/2 teaspoon ground ginger
2/3 cup chopped dates or chopped raisins
Lightly grease crockpot. Preheat on high for 20 minutes. Meanwhile bring milk, cornmeal and salt to a boil. Boil, stirring constantly, for 5 minutes. Cover and simmer an additional 10 minutes. In a large bowl, combine eggs, brown sugar, molasses, butter, and spices. Gradually beat in hot cornmeal mixture; whisk until smooth. Stir in raisins or finely chopped dates. Pour into crock and cook on high for 2 to 3 hours or low for 6 to 8 hours

Happy birthday to AB and her sister too. Such beautiful little girls. Great to have their parties together like this. Never thought of making pudding in the crockpot, cute idea.
