THOUGHT FOR TODAY
Each birthday, each day , IS a celebration!
I was blessed to see this DIL not too very long ago but I won’t be seeing her today. Another card full of birthday wishes went off in the mail as usual. I will, however, be going to a party today for two of my granddaughters. They live close by so I can celebrate with them. I believe in remembering birthdays with gusto. It’s a celebration of presents, candles, cake, and special wishes. It’s a day to honor life, reflect, and set goals for the future.
Today is Chicken Soup for the Soul Day which is a celebration all about you. Perfect timing for a day we’re celebrating some birthdays!
According to the creators of the book series of the same name, Chicken Soup for the Soul Day was created as a celebration of who you are, where you've been, where you're going, and who you will be thankful to when you get there!
It’s also a celebration of the value and healing of chicken soup, especially mom's chicken soul. Chicken soup has long been seen as remedial for colds, flus, and just about anything that ails you. You can't find that healing in a can. You can only find it in mom's homemade chicken soup.
I guess that is my cue to make some homemade chicken soup. I think I’ll put some in the crockpot to cook while I’m away this afternoon at the party. It’ll be ready when I get home later on.

National Pizza With Everything Day!
This recipe is supposed to be a Pizza Hut copy cat. While it sounds delicious, it does take some time due to the fact that you make your own crust.
PAN PIZZA
2 1/2 cups bread flour
2 teaspoons kosher salt, plus more for sprinkling
1/2 teaspoon instant yeast
1 cup plus 3 Tbsp water
2 teaspoons extra virgin olive oil, plus more to coat pans and drizzle
Pizza sauce, cheese, and toppings as desired
In a large bowl, combine flour, salt, instant yeast, water and olive oil. Mix with your hands until all dry flour is incorporated. Cover bowl tightly with plastic wrap and allow to sit out on the countertop for 8 to 24 hours. Dough will significantly rise and fill the bowl.
After resting and rising time, sprinkle the top of the dough lightly with flour, then transfer it to a well floured work surface. Divide the dough into two equal pieces and form each into a ball. Use floured hands here, too.
Pour 1 to 2 tablespoons of oil in the bottom of two cast iron skillets. You can also use two cake pans. Place one ball of dough in each pan and turn it all around to coat the outside evenly with oil.
Press the dough around the pan, flattening it slightly, until it's expanded around the entire bottom and edges of the pan. Cover tightly with plastic wrap and let the dough sit out for another two hours. After the first hour, place an oven rack into the middle position and preheat oven to 550 degrees.
After two hours, press your fingertips around the pizza dough, popping any large bubbles that appear. Lift up one edge of the dough to let any air bubbles underneath escape and repeat, moving around the dough until there are no air bubbles left underneath and the dough is evenly spread around the pan.
Top each round of dough with sauce, cheese, pinch of salt and other toppings as desired. Drizzle top with olive oil. Transfer skillets or cake pans to oven and bake for 12 to 15 minutes, or until the top is golden brown and bubbly and the bottom is golden and crisp.

We're not there just yet (90-degrees predicted), but I may try and make some -- a first! -- this year. Our favorite Jewish deli recently closed and they made the BEST chicken-matzah ball soup; gonna miss that.

I made some gluten free muffins once but they turned out a bit hard...hmm...I thought, if I change this a bit, it might make a good pizza crust. and it did!!
My husband was TRHILLED to have a real pizza! YAY For homemade pizza!
