Sometimes we get so bogged down with all we have to do that we forget to smile and laugh. I know for a fact that laughter is a great stress reliever. At this point in my life, I have left behind the stress of work, tight schedules and carpooling children but everyone has some stress. More than not, you’ll find me laughing at myself these days. No one else is around very often to laugh with and some of the things I do are so ridiculous, I have laugh. It’s a whole lot better than crying or getting angry.
The benefits of laughter go well beyond the ever important fun factor. Laughter may be a blood pressure reducer, an immune system booster, a stress buster and a friend maker.
I had a great weekend and hope you did too. There was a lot of laughter and smiles at the girls birthday party on Saturday and that weekly hour at church on Sunday always refreshes and renews. They say a weekend well spent brings a week of content. We’ll see…

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Pickle Day!
Pickles have been a popular food for thousands of years. It is said that Cleopatra attributed her good looks to her full diet of pickles. Pickles are a versatile vegetable that can be enjoyed as a condiment, snack, or side dish.
One of my favorite ways to enjoy a pickle is on a sandwich. So today I’m sharing a tasty sandwich recipe.
Grilled Ham, Cheese, And Pickle Sandwiches
MAKES 4 SERVINGS
8 slices sourdough or white bread
1/4 cup mayonnaise
1 1/2 cups grated mozzarella
1 1/2 cups grated Gruyère
1/2 cup grated aged goat cheese
3/4 cup Bread and Butter Pickles
3 ounces thinly sliced prosciutto or ham
6 tablespoons unsalted butter
Smear both sides of bread slices with mayonnaise. Combine cheeses in a bowl. Sprinkle 4 slices bread with half of cheese mixture, dividing equally. Top each with 3 or 4 pickles. Divide prosciutto or ham among sandwiches; top with remaining cheese. Cover with remaining bread.
Melt 2 tablespoons butter in a large heavy skillet over medium low heat. Add sandwiches to the skillet and cook until bread is golden, 9 to 10 minutes. Add 1 tablespoon butter to the skillet, flip sandwiches, and cook until bread is golden and cheese is melted, 9 to 10 minutes longer.
I do love grilled cheese and my electric skilled is the perfect size to do 4 sandwiches at a time. Although I don’t usually have goat cheese on hand here at my house, I think any mixture of grated cheeses would do. You even can buy a 3 cheese mixture that is already grated in the grocery store.

It is always good to laugh. Last night at dinner we were all laughing at Christmas songs that we were singing. It felt good to laugh indeed.

As always, I love your quotes! I believe that there are occasional days when it's important to actually separate ourselves from situations that cause us to get all riled up. I know there have been evenings when I've simply said no to watching tv programs--sometimes even news programs--because I know how they will agitate me. They'll go on whether I watch or not--but I figure I'm responsible for me!
