It’s National Cereal Day! Cereal is the most popular breakfast food in America, but that wasn’t always the case. Up until the 1860s, most people ate eggs, bacon, and sausage every morning. Cereal emerged as a healthier alternative at the end of the 19th century.
The invention of one of the most famous brands of cereal was an accident. In 1877, two brothers named John Harvey Kellogg and Will Keith Kellogg were experimenting with food made with boiled wheat. They left a batch out overnight and returned to find it stale. Instead of throwing it away, they rolled it out and discovered that each wheat berry formed its own flake. They tried the same process with corn, and created the first dry breakfast cereal, which we now know as Kellogg’s Corn Flakes!
Many people start their day with a bowl of cereal. Wholegrain cereals are an excellent source of fiber, iron, and B vitamins. Celebrate National Cereal Day with a bowlful of your favorite brand!

THOUGHT FOR TODAY
Sometimes I've believed as many as six possible things before breakfast.
Lewis Carroll
My favorite cereal these days is good old fashioned oatmeal. It’s good and good for you too. But I did find a recipe to share though, for some super chewy St. Patrick’s Day cereal bars made with Lucky Charms, Golden Grahams and marshmallows. A simple no bake recipe!
St. Patricks Day Cereal Bars.
3 cups Lucky Charms
3 cups Golden Grahams
10 ounces, Mini Marshmallows
4 Tablespoons Butter
Spray an 8 by 8 baking pan with cookie spray and set aside. Combine the Lucky Charms and Golden Grahams in a large bowl and mix well. Set aside.
In a large microwave safe bowl, combine the marshmallows and butter and heat on high in the microwave for 2 minutes. Watch carefully to avoid marshmallows overflowing.
Once heated, pour the marshmallow mixture over the cereal. Using a rubber spatula, mix well until all the cereal is coated with marshmallow. Dump into the prepared baking pan and push down to form an even layer.
Allow to cool for 10 minutes. Serve immediately or keep stored in an air tight container for up to 3 days or in the freezer for up to 2 months.
I know for a fact that most of my grandchildren like Lucky Charms so maybe they’d like these too.
I hope you all have a GREAT start to this new week. Happy Monday !

That was interesting how cereal got it start. I didn't know that! Cereal was such a staple when we were growing up; always good, always quick to get together on busy school mornings. I agree about oatmeal; good for us and tastes delicious!
