Did you know that raisins are made of grapes and sunshine. They are used in many parts of the world for cooking, baking and as a snack. Although sun dried, raisins have a high amount of sugar, they contain antioxidants, are high in fiber and have a low glycemic index. Eating raisins every day helps you meet your daily requirement for iron.They are also known to have blood pressure reducing properties. Having a few raisins is like eating a little bit sunshine.
Many traditional Easter breads have raisins in them. Here at my house it’s become a Good Friday, which is tomorrow, tradition to make Hot Cross buns. I either buy some at a bakery or make them the easy way and although I’ve shared the recipe before, here it is again today
1 can, 8 oz, refrigerated crescent dinner rolls
1/3 cup raisins
1/4 teaspoon grated lemon peel, if desired
Icing
1/4 cup powdered sugar
1 to 2 teaspoons milk
Heat oven to 375°F. Unroll dough and separate into 8 triangles.
In small bowl, mix raisins and lemon peel; spoon about 1 teaspoon raisin mixture onto short side of each triangle. Gently wrap corners of dough over filling and roll to opposite point; pinch to seal. Place point side down on ungreased cookie sheet.
Bake 12 to 14 minutes or until golden brown. Remove from cookie sheet; place on wire rack. Cool 10 minutes.
In small bowl, mix powdered sugar and enough milk until smooth and drizzling consistency. With spoon, drizzle icing in cross shape on top of each bun.
What ever way you eat your raisins, chocolate covered or not, they are good and good for you!

That is an easy recipe and I bet delicious! Learned something new about tradition of having some type of raisin bread for Easter. That makes sense because growing up my mom would make a sweet bread she called Babka, not sure if that is the real name, but it did have raisins in it.
