Today is National Quilting Day which celebrates fabulous quilts and those who make them. Quilting is a skill that produces warm and beautiful results.
Today is a day to recognize and appreciate the quiltmakers, the skill and the warm and the results. If you are a quiltmaker, spend a minute to recognize and appreciate that you have truely been blessed with a special skill. If you are not a quiltmaker, wrap yourself into a quilt and enjoy the warmth.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
Our lives are like quilts bits and pieces, joy and sorrow, stitched with love.
I have several quilts and one of them is a very special one made by my grandmother. She loved to quilt and made many. There was rarely a time when her hands were idle. She loved to quilt, to sew and crochet. The one pictured today is a favorite because of what it has on it. I purchased it at a discount department store several years ago. It was not expensive at all and was hand stitched by someone’s loving hands.
Our great grandmothers had their sewing bees. They would meet at the church or someone’s house, bring a casserole to share and sit around the quilting frame, talking and stitching. So I thought I’d share a casserole recipe with you all today.
Chicken and Dumpling Casserole
3 Tablespoons olive oil
¾ cup chopped onion
1¼ cup chopped carrots
¾ chopped celery
3 cups chicken broth
3 Tablespoons flour
2½ cups chopped rotisserie chicken
1¼ cup frozen peas
½ teaspoon salt
½ teaspoon pepper
Dumplings
1 cup flour
2 teaspoons baking powder
¼ teaspoons salt
1 egg
⅓ cup milk
In a large skillet heat oil and add onion, carrots, and celery. Cook until tender. Add flour and ¼ cup broth. Stir until thickens and then slowly add the rest. Cook over medium heat until it thickens, about 3 minutes. Add chicken, peas, salt and pepper.
Pour into baking dish. Preheat oven to 400.
To make dumplings: In a medium mixing bowl add flour, baking powder, and salt. Wisk together. Add egg and milk and mix with a wooden spoon until just combined. Drop dough over chicken mixture with a spoon. Makes about 8 dumplings
Bake for 15 minutes or until the dumplings are golden brown.
There is nothing like a little comfort food to make you feel warm and cozy
And quilts make you feel warm and cozy too. Nothing like being wrapped up in one sipping a hot cup of tea on a chilly day. And it’s a chilly one compared to the ones we’ve been having here today. We’ll be mid 30’s for a few days but will return to the 50’s by mid week they say.

Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.

with the shield of your strength,

that with all who love them
they may ever praise you for your loving care.

We ask this through Christ our Lord.

That is a cute quilt and a delicious casserole recipe! My mom did enjoy making some quilts during a part of her life and she did enjoy getting together with other women to work on them; something about working on a craft like that with others around makes it really more enjoyable with the fellowship :)

Only in the last few years have I come to appreciate (and yes, adore) the two quilts my mother fashioned by hand. I've a few favorite pieces of cloth and want to consign a quilt ... but haven't found anyone willing to do so.
Your DIL's mother was on my mind when I went to sit down today. Unfortunately, your news was not what I hoped to hear ... and on her daughter's birthday, too. I don't think anyone who's lost their own mother can remain impassive to another's grief. Sending prayers from Phoenix.
