It’s National Chocolate Cupcake Day! Chocolate cupcakes are a delightful treat served at gourmet bakeries and kitchen tables across the country.
Cupcakes are made with a variety of flavors, ingredients, and decorations, but simple chocolate cupcakes remain a perennial favorite. Bake, frost, and decorate a batch today to celebrate National Chocolate Cupcake Day!

You can’t be sad when holding a cupcake!
Yes, it does seem that everybody’s favorite is always chocolate. Cupcakes are always good and fun to decorate too. The pictures today are of some birthday cupcakes from some of the grand babes parties. I always use those little paper cupcake cups when I bake mine. They now come decorated for all kinds of party themes too.
It always amazes me when I see some of the gourmet cupcakes offered in the bakeries and the price that they get for them is amazing too. I don’t do gourmet but the recipe below sounded pretty yummy.
Chocolate Cupcakes
1 cup granulated sugar
3/4 cup plus 2 tablespoons flour
1/4 cup plus 2 tablespoons unsweetened cocoa powder, sifted
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
1/2 cup sour cream, room temperature
1/4 cup canola oil
1 tablespoon vanilla extract
1/2 cup boiling water
Chocolate Buttercream Frosting
2 sticks unsalted butter, room temperature
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
2 tablespoons heavy cream
1/2 cup unsweetened cocoa powder, sifted
2 tablespoons chocolate sprinkle
To prepare cupcake, preheat oven to 350F. Grease muffin tin or line with muffin liners.
In a large bowl, mix together sugar, flour, cocoa powder, baking powder, baking soda and salt.
Crack in the egg, spoon in the sour cream, and pour in the oil and the vanilla. Mix with a wooden spoon until just combined.
Pour in the boiling water, and slowly mix until smooth and liquid.
Divide batter evenly among prepared muffin cups, about halfway full. Transfer muffin tin to oven and bake for 15 to 18 minutes. Transfer muffin tin to a wire rack and let cupcakes cool completely.
To prepare buttercream, beat butter for a few minutes in a standing mixer on medium speed. Add powdered sugar and turn the mixer on low, beat until the sugar incorporates with the butter. Add vanilla, heavy cream and cocoa powder, beat on medium speed for another 3 minutes, or until buttercream becomes light and fluffy.
Frost the cupcakes with the buttercream and garnish with chocolate sprinkles.
BrrrChill it's a chilly weekend here with some night time temps right around freezing. This morning it is 36 degrees here. Thankfully it looks like the week ahead will be in the upper 50’s, mid 60’s, and even close to 70 degrees at times. The long range forecast shows no night time temps close to freezing at all.

It’s time for a family game night. Play a new game. Even the youngest child can have fun playing Memory or Go Fish. Everyone loves a good game of charades, think Halloween. Break out the board games that you haven’t seen in a while, Clue perhaps?. Have some fun tonight.

Such a great assortment of cupcake pictures! I know when my niece got married 13 years ago, they had cupcakes for the guests and only one layer of wedding cake that they cut for themselves. We have gotten the gourmet cupcakes before; they are delicious but definitely not worth the price :)

When anyone says 'cupcake' I'm reminded of the first, dark days after DH's cancer diagnosis:
... My son sent a generous check with the stipulation: Every hurdle completed was to be observed by purchasing a single cupcake, lighting a candle atop then making a wish.
Thank God, we've not had to purchase a cupcake in some time now!
I bought 4 cup cakes yesterday and they cost $4.95. I don't make them since most of the time it's only me and my husband, but plan on using this recipe. Take care, Jean
