Today is Southern Food Heritage day. This official day means it's time to pull out your cast iron pans, and start up the smoker, to enjoy your favorite Southern dishes. Let’s all raise our glasses to the delicacies of the South!

THOUGHT FOR TODAY
Southern cooking warms the heart and soothes the soul.
I guess we all love southern fried chicken, but there are a lot of other southern foods I love too. I love brown beans cooked with a ham bone and cornbread made in my cast iron skillet. I did a google search to find a new southern recipe to try out and this is what I found.
Southern Ham and Bean Soup
1 tablespoon olive oil
1 tablespoon butter, plus more for topping
1 small onion, chopped fine
2 cloves garlic, chopped fine
1 1/2 cups leftover diced ham
2 teaspoons fresh thyme
2 15 oz. cans white beans, drained and rinsed
4 cups chicken broth
bay leaf
1 can of cooked collard greens
In a heavy bottomed soup pot over medium heat, cook onion, garlic, ham and thyme in oil and butter, stirring occasionally, until onion is softened, about 4 minutes.
Add beans, broth, bay leaf, collards, salt and pepper to taste, and simmer, uncovered, stirring occasionally, 20 minutes, so the flavors can develop. Remove bay leaves before serving. Serve in soup bowls and garnish with a tablespoon of butter on top
I like to simmer my soup a little longer as I think it brings out the flavor of the ham.
This time of year soup gets more and more popular and I have some kind of it on the menu every week. This is one I’ll be trying. I’ve never had collard greens before and this might be a great way to try them out.
After a chilly Saturday we’re to warm up in the low 70’s today. The pictures today are of some of our October sunrises. This time of year the sun moves a little to the south in the eastern horizon and I can see it from my kitchen window each morning.
