Oktoberfest begins this weekend. It’s a 16 day festival, held in Munich, Bavaria, Germany. This year it runs September 20th through October 5th. While it is a giant world festival in Germany, Oktoberfest celebrations are held around the world during this time. So, if you can't get to the fair in Germany, you can probably find some where locally to participate.
It's time to eat, drink, and be merry and celebrate the rich heritage of the German people.

I do love the food they serve at Octoberfest celebrations and one of my favorites is German potato salad. I’ve found a new recipe to try out this year. It sounds delicious and I’m sure I’ll be making some soon.
GERMAN POTATO SALAD
10 medium potatoes
1 3/4 Beef Broth
1/4 cup cider vinegar
1/4 cup flour
3 tablespoons sugar
1/2 teaspoon celery seed
1/8 teaspoon ground black pepper
1 medium onion, chopped
3 tablespoons chopped fresh parsley
Place the potatoes into a 4 quart saucepan. Add water to cover. Heat over high heat to a boil. Reduce the heat to low. Cook for 20 minutes or until the potatoes are tender. Drain. Let cool and cut in cubes. Place the potatoes into a large bowl.
Stir the broth, vinegar, flour, sugar, celery seed and black pepper in the saucepan. Stir in the onion. Cook and stir over medium high heat until the mixture boils and thickens. Reduce the heat to low. Cook for 5 minutes or until the onion is tender.
Add the parsley and broth mixture to the potatoes and stir to coat. Serve warm. Serves 8.
Celery seed is often used in place of stalks of celery but in the case of German potato salad I think it is a must.

I have counted at least 3 things every day that I'm thankful for over almost 2 years and have now reached 2000 gifts. On my way now to 3000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

That potato salad does look interesting, Ma; I don't think I've ever seen one with beef broth in it before! I think I'll back it soon too!

I can't believe it's only three days til Fall.... Our Big Fresno Fair starts Oct. 1st... Happy Friday!! :)
