Life is a Special Occasion!

September 6th. is Read a Book Day. On Read a Book Day, it’s not compulsory to read a whole book but the day serves as inspiration to people to read a section of a book they particularly enjoyed, to read with children, to donate a book to a children’s school library, or to host a book reading party.
Taking the opportunity to enjoy some time out of the day to relax and read is good for the soul and the mind.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
Good friends, good books and a sleepy conscience: this is the ideal life.
Mark Twain
I do read a lot of books and there have been some I’ve read in one day. Most of the time though I read while eating my lunch or before I go to bed and that is usually only for about half an hour so it takes time to finish one.
It’s hard to believe after a very hot week, but they say the high for today will be in the low 70’s . It’s a reminder that cooler days are on the way. We will have a few 80 degree days this coming week but mostly we’ll be in the 70’s and that is what they say is normal for September here.
It may just be a very good day for a pot of chili. I haven’t had it in a very long time. On one of the blogs I read, they mentioned making Wendy’s chili so I did a search to see if I could find the recipe and am sharing it with you all today.
2 lbs ground beef
1 (29 ounce) can tomato sauce
1 (29 ounce) can kidney beans, with liquid
1 (29 ounce) can pinto beans , with liquid
1 cup diced onion, 1 medium onion
1/2 cup diced green chili pepper, 2 chilies
1/4 cup diced celery , 1 stalk
3 medium tomatoes, chopped
2-3 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water
Brown the ground beef in a skillet over medium heat. Drain off the fat.
In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat. Cook, stirring every 15 minutes, for 2 to 3 hours.
I like my chili on the mild side so probably will not be adding any chili peppers to mine. I do like to top it off with some shredded cheddar cheese though.
I hope you all have a super Saturday!
COUNTING MY GIFTS
Let books be your dining table,
And you shall be full of delights
Let them be your mattress
And you shall sleep restful nights.

I have counted at least 3 things every day that I'm thankful for over almost 2 years and have now reached 2000 gifts. On my way now to 3000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.
2012. for good books to read, I do so often
2013. for a cool day to cook a pot of chili
2014. for the internet where I found this copycat recipe

I have seen that recipe for Wendy's chili before; maybe will make it in the coming fall ahead :)
I always like to read a good book; I like finishing up my work day, then reading blogs, and before starting dinner or taking Koda for a walk, sitting down and reading for a little bit to unwind :)

Being a book lover, I'm so taken with that quote/advice!
I love my books! I am just about to finish one since I've had time to read on vacation... We'll see 100 today, but I see the 80's in our not so distant future... :)
