Get in touch with friends and family today, especially those you haven't seen in a while. Your mission is to not let them forget you, as it's forget-me-not day!
I'll be remembering each and everyone of you today! The nicest thing about sending out this newsletter everyday is that I can keep in touch with my family and friends.

Make up your mind to be happy, and learn to find pleasures in simple things

NEW IN THE KITCHEN
Sometimes I wonder who makes up these crazy days, but today I will be happy with National Vanilla Cupcake Day
If you like the taste of Twinkies, try making your own vanilla cupcakes at home
1 1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 eggs
1 egg yolk
2 teaspoons vanilla extract
1/2 cup milk
Preheat oven to 350 degrees F. Line 12 muffin tins with paper liners or butter and flour the tins, set aside.
In a small bowl, whisk together the flour, baking powder and salt; set aside.
In a medium bowl, beat the butter until light and fluffy with mixer on high speed. Gradually beat in the sugar until very light and fluffy. Reduce speed to medium. Beat in the eggs, one at a time, the egg yolk and the vanilla . Reduce speed to low. Beat in the flour mixture alternately with the milk, just until blended.
Spoon the batter into the prepared muffin tins 3/4 full.
Bake until the tops of the cupcakes are springy when lightly pressed with fingertip but not quite golden, 20 to 22 minutes. Cool 15 minutes in the muffin tin on a wire rack.
You can frost these with your favorite frosting and decorate with sprinkles if desired. This recipe makes 12 cupcakes

AROUND HOME
The best things in life aren't things. How often we strive to achieve material that we think will make us happy, but in the end it is not material things that make us the happiest. It is those moments, memories, the love of our family and friends, no material thing could ever replace these.
Today is the day to finish everything up that I need to do before leaving for my long weekend. There is lots yet to do. I'll be taking my laptop with me so I'll be in touch. The newsletter may be shorter than usual in the next few days, but hopefully I'll be able to share some pictures with you all.
COUNTING THE DAYS
In the rush of daily living it's easy to forget all the remarkable people, real or fictional, who have been part of your life. But if you just imagine they are near for a moment, you will realize that anyone who ever touched your heart is always with you, patiently waiting to emanate warmth and support whenever your remember to think of them.
