HAPPY THURSDAY !!
The end of my long work week has finally come again. I’ll be off to the camper right after work so you won’t hear from me until Monday morning.
It’ll be a chilly weekend with highs only in the 50’s for the most part. The sun is supposed to shine for us so that is a great thing.
I’ll try to take lots of photos as the fall colors should be at their peak right now.

1 cup (2 sticks) butter, softened
Heat oven to 350ºF.Spray cookie sheets with cooking spray.In large bowl, beat butter and sugars with electric mixer until creamy. Add eggs and vanilla; beat well. Dissolve coffee granules in hot water. Add to butter mixture; mix well. Add combined flour, baking soda and salt; mix well. Stir in oats, chocolate chips and walnuts.
