Life is a Special Occasion!
Today is Palm Sunday, the fifth Sunday of Lent, the last Sunday before Easter and the beginning of Holy Week. First celebrated in the 300's, Palm Sunday honors Jesus' triumphant entry into Jerusalem with the symbolic waving of palm branches, an emblem of joy and victory, the triumph before His crucifixion.

I can hardly believe it’s Palm Sunday already and a week from today will be Easter Sunday! Our family Easter celebration won’t be until the 22nd of April and I’m really looking forward to that. Not everyone will be able to gather together, but as many that can will come.Time distance and circumstances tend to keep up apart these days. None the less, it’ll be a happy celebration.
Today is to be sunny and in the lower 70’s and I’ll be off to church as usual later on this morning. Otherwise the day should be a relaxing one. As we haven’t had any rain for a couple of days now I may be able to get outside in the yard and pick up some of the sticks and branches that have fallen from all the trees around the house. It won’t be long now and the grass will need mowed. It’ll be a great day just to get outside for awhile !
I’m sure that in the week ahead there will be lots of eggs being decorated in preparation for Easter and that is what the pictures are of today. Eggs decorated by children and grandchildren last year.

It’s National Chinese Almond Cookie Day!
These light, tender cookies are great served with ice cream as an easy holiday dessert or with simply with a cup of coffee or tea after dinner.
1 cup Butter, softened
3/4 cup sugar
1 large Egg
1 teaspoon almond extract
2 1/4 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
48 whole blanched almonds
Egg, yolk only
1 tablespoon water
Heat oven to 350 degrees.
Combine butter and sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and almond flavoring; beat until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed.
Shape dough into 1 1/4 inch balls. Place 2 inches apart onto ungreased cookie sheet. Flatten slightly; press almond into center of each cookie. Beat egg yolk with water in bowl; brush cookies evenly with egg mixture. Bake for 11 to 15 minutes or until just set. Makes approximately 48 cookies.

Palm Sunday is like a glimpse of Easter. It’s a little bit joyful after being a somber during Lent.
Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.
