I’m so thankful for living in the land of the free and the home of the brave. We live in a free country, but many don’t. Let’s take a moment to pray for them today.
I have never lived any where else and sometimes take these freedoms for granted. Sad but true we don’t often appreciate something until it is taken away.
Today is my day to cook here at my house and on the menu is:
Apple Topped Ham Steak
Makes 8 servings
4 fully cooked boneless ham steaks
1 cup chopped onion
3 cups apple juice
2 tsp Dijon mustard
2 medium green apples, thinly sliced
2 medium red apples, thinly sliced
2 Tbsp. cornstarch
1/4 cup cold water
1 tsp. rubbed sage
1/4 tsp. pepper
In a large skillet coated with cooking spray, brown hamsters in batches over medium heat. Remove and keep warm.
In same skillet, saute onion until tender. Stir in apple juice and mustard; bring to a boil. Add apples. Reduce heat; cover and simmer until apples are tender.
Combine cornstarch and water until smooth, stir into apple juice mixture. Bring a boil and stir for 2 minutes. Stir in sage and pepper. Return hamsteaks to skillet. Heat through.
I don’t have any apples on hand so today I’ll be using applesauce instead. It will still make for the delicious apple flavor. This is a wonderful change from my usual pineapple and ham.
We are starting to warm up a little today, with temps in the mid 60’s and mostly sunny, so it will be a great day to get out and do my shopping. I have made a new menu to do my shopping list from and on my menu for next week is:
Monday - Stuffed Cabbage Soup
Wednesday - American Goulash
Friday - Raisin Cardamom Overnight French Toast
Weekend - One Pan Chicken Parmesan Pasta
Today I’m thankful for warmth. The colder days we’ve been having have me thankful for the warmth in my home. I have central heating where the furnace sends heat to every room in the house. I have warm clothing to wear when the cold winds blow. I also have boots to keep my feet warm. I love the warm smiles and hugs of family and friends too. What ever would I do without them!

Appreciate the freedoms we have and be thankful for them!
Your comments on the Berlin Wall. I remember being so afraid of Russia and I remember the Berlin Wall and how so many people lost their lives trying to get free. Freedom is not free. It is hard to believe it is in the same lifetime. I wonder if the kids of today appreciate the freedom they have.
I, too, remember being terrified of Russia ... the bear. I saddens me enormously when young people (even not so young!) disrespecting the Flag and what it represents. Years ago, my husband and I were on a tour in Haiti; the living conditions indescribable. Another tourist remarked (that) he wished his teenagers could witness that and perhaps appreciate what they've been given.
WE love that little cutie with the flag, what a great picture.... WE are proud of our Freedom and appreciate the remembrance of others freedoms some that are still waiting for a WALL to come down.
We are getting set for some wind and rain from Nicole. Hoping it will stay below 70mph in this area.
