THOUGHT FOR TODAY
There is no such thing as too many deviled eggs.
Jan Karon
I do love deviled eggs but usually only make them for special occasions when family is coming in. I usually do about 10 eggs at a time as my egg holder holds 20 halves. I used this dish to take mine to family dinners. I remember one time I didn’t make any and one of my granddaughters insisted she help me make some. It would not be a family dinner without the eggs, she said.
My deviled eggs are not hot but I do use mustard in them and some of it can be very spicy.
It’s my day to make up another menu to do my shopping from for the week ahead.
Monday - Stuffed Pepper Soup
Wednesday - Apple Topped Ham Steak
Friday - Butternut Squash Carbonara with Broccoli
Weekend - Maple Glazed Pork Tenderloin
And on the menu for today is:
Ground Beef and Pasta Skillet
Makes 4 servings
1 Tbsp olive oil
1 lb. lean ground beef
8 oz. mushrooms, finely chopped
1/2 cup diced onion
1 15 oz. tomato sauce
1 cup water
1 Tbsp. Worcestershire sauce
1 tsp. Italian seasoning
3/4 tsp. salt
1/2 tsp garlic powder
8 oz whole wheat rotini
1/2 cup shredded Cheddar cheese
1/4 cup chopped basil for garnish
Heat oil in large skillet over medium heat. Add beef, mushrooms and onion and cook stirring until the beef is no longer pink and the mushroom liquid is evaporated.
Stir in tomato sauce, water, Worcestershire, Italian season, salt and garlic powder.
Add pasta and bring to a boil. Cover and reduce heat, stirring once or twice until the pasta is tender .
Today I’m thankful for my home. It’s my happy place. I’m warm and comfortable and safe. It is a single wide mobile home. Nothing fancy about it. But it has everything I need and more. I’m thankful I can still live on my own and not to be a burden on any of my family.
The beginning of November is turning out to be much better than the beginning of October was we have temps in the low 70’s for the next few days!
I hope you all have a WONDERFUL Wednesday!
The same boiling water that softens potatoes hardens eggs. Its all about what you are made of not your circumstances.

You may have a heart of gold but so does a hard boiled egg.

Eggs are good for you and taste good too !
Love eating deviled eggs but don't like to fix them:)
That's so sweet that your granddaughter offered to help make eggs b/c she missed them!
Oh, I LOVE deviled eggs, but there's not much point making them when Tom doesn't care for them. The only exception is when my Bible study group has its quarterly brunch. They love when I mix Boursin cheese with the yolk.
I just saw where another blogger uses honey mustard to make hers. Yum!
We enjoy your thankfulness, and more of us in this world should be thankful for all that we have.
OH yes and I am thankful for deviled eggs. I love them and yep they are mostly served on special occasions. If they are brought to an Old Folks Buffet, you will be lucky to get one. LOL
Thanks for a delightful post.
Sherry & jack.. in the sunshine
I like deviled eggs too and never make them. I will have to do that. Since you are counting down to winter - are you looking forward to it?
Deviled eggs disappeared with hours when I set them out. Homemade or not, those eggs are gone! I am also counting down to winter. Ready to set up my Xmas tree.
How delightful your home must be, comfy and cozy …and it’s so lovely to hear how grateful and content you are to have it…thankfulness is always a good thing. I am thankful for deviled eggs, they are a treat ! Best, V.
