THOUGHT FOR TODAY
I like pickles both sour and sweet. For years we always had a pickle dish on the table for Sunday dinners. My mom had one and so do I. They are a delicious companion to any meal and I will definitely enjoy some pickles today and celebrate .
Pickles are full of good bacteria called probiotics, which are important for gut health. They fight disease and pickles are high in an antioxidant called betacarotene which your body turns into Vitamin A.
Monday’s are always my day to cook up something new and on the menu today besides pickles is:
Stuffed Cabbage Soup
Makes 8 servings
2 Tbsp. Canola oil
1 1/2 lbs. lean ground beef
4 cups chopped green cabbage
2 cups chopped yellow onion
1/4 cups chopped carrots
1 cup chopped celery
2 Tbsp. light brown sugar
1 Tbsp. paprika
1 tsp salt
1/2 tsp. pepper
1/4 tsp cayenne pepper
1 15oz. can tomato sauce
4 cups chicken broth
1/4 cup medium grain brown rice
2 Tbsp. chopped fresh parsley
Heat oil in a large heavy pot over medium high heat. Add ground beef; cook, stirring often until meat is cooked through and starting to brown slightly. Add cabbage, onion, carrots and celery; cook stirring often until onion is translucent.
Add brown sugar, paprika, salt, pepper and cayenne to beef mixture; cook over medium high heat , stirring constantly until spices are toasted. Stir in tomato sauce and broth, scraping the bottom of the pot with a wooden spoon to release any browned bits. Bring soup to a boil over medium high heat and cool until the rice is tender, about 35 minutes. If desired sprinkle with parsley before serving.
Serving size is 1 1/2 cups. I don’t happen to have and celery or carrots on hand today so I will omit them and use some celery salt instead. I’ll also cut the recipe in half for just me.
We’re starting off this week in the low 40’s so it’s still cold out here. By the weekend they say we’ll even be colder with temps in the 30’s. BrrChill! It’s definitely time to bundle up here.
Today I’m thankful for family traditions. The things we do every holiday to celebrate. We always try to get together as a family. It’s traditional to share a big meal when everyone brings something to share. We have some traditions that only started with my family and we have some that were passed on to us from our ancestors long ago.

My mama made pickles every year. She declared I could eat a Quart of them. Not sure what kind they would have been listed as, but after getting older I think they would have been some home recipe. Might have been called Bread and Butter Pickles (but have no idea how they got that name!

Aw, these pictures make me smile -- remembering how my mother liked to put out pickles (etc.) at her Sunday dinner table. I had no idea they were also so beneficial for our health! Bundle up!
