My pictures today are of two of my favorite veterans, DS#2 and his wife. They both served the military for over 20 years and are now both retired. Although now they both have other jobs, their service to our country is now done.
DDH served in the Air Force for 4 years and I am not forgetting him today. My father also served in WWII in the Army, and was a purple heart recipient who I am also honoring today. At least they all made it home and for that I’m thankful. Many didn’t and we can’t forget those who died in the service of their country. Because of these brave men we now live in the land of the brave and the home of the free.
On Fridays I cook up something new here and on the menu today is:
Butternut Squash Carbonara with Broccoli
Makes 4 servings
1 butternut squash, peeled
2 cups brocoli florets
2 Tbsp. olive oil
1/2 tsp ground pepper, divided
1/4 tsp salt
2 eggs, at room temperature
3/4 cup grated Parmesan cheese, divided
2 cloves garlic, grated
1/4 cup vegetable broth
Position oven racks in upper and lower thirds of oven. Preheat oven to 400 degrees.
Cut the neck of the squash from the bulb. Using a noodle blade of a vegetable slicer, or a julienne or regular vegetable peeler, spiralize the squash neck into long strands. You should have about 10 cups of noodles. Reserve the bulb for another use. It freezes well.
Combine the sprilized squash, broccoli, oil, 1/4 tsp pepper and salt in a large bowl. Divide the mixture between 2 large rimmed baking sheets. Roast until just tender.
Meanwhile, whisk the eggs and 1/2 cup cheese in a medium bowl.
Add a little more olive oil to a pan and over medium heat add garlic and stir until fragrant. Stir in broth and the remaining 1/4 tsp pepper. Transfer 3 Tbsp. of the broth to the egg mixuture, whisking constantly until smooth. Add the egg mixture to the pan; cook over low heat, stirring until thick and creamy. Add the roasted vegetables and gently toss to coat. Transfer to a serving bowl. Serve topped with the remaining 1/4 cup of cheese.
The only squash I have today is some frozen butternut squash that is cut into cubes, so I won’t be able to spiralize it to make the noodles, so I’ll be using some spaghetti in mine. I’ll roast the squash and the broccoli and add it to the spaghetti. Just a little variation to this recipe, but it sure does sound good.
Today I’m so thankful for life. Each day I wake up is a gift. I get another chance to get things right. I’m happy to greet a new day as the sun rises and the sunsets always remind me to be thankful for that day.
Yesterday was a beautiful day and the last one we’ll be seeing in quite awhile. It seems the hurricane in Florida is moving in a direct path to Ohio and we’re going to be seeing a lot of rain. Then by Sunday we have a cold front from the north that could bring snow our way. The cold winds over Lake Erie can bring what we call Lake effect snow.

ADVICE FOR TODAY
On this Veterans Day, let us remember the service of our veterans and let us renew our national promise to fulfill our sacred obligations to our veterans and their families who have sacrificed so much so that we can live free.

I will remember and never forget!
Yes, never ever forget! Our veterans are owed an enormous debt. This feels like a day to watch Saving Private Ryan. Again. Not because it's a 'feel good' movie, but because it makes me FEEL and remember. It's the least I can do.
PS - This recipe sounds great!
I agree with you and Mevely - we owe them a great debt. They kept our country free and safe. My hubs is a vet too.
I am blessed to know so many Veterans. Both friends and family, God bless them all. Remembering brothers, uncles and cousins who served with pride and honor...
