THOUGHT FOR TODAY

Although there are no fireworks or bonfires going on here today, I’ll join the celebrating by being thankful the plot was discovered the conspirators were punished. I do have a lot of English ancestry, so I suppose some of my long lost relatives might have lighted a bonfire to celebrate this date.
Today I’m thankful for the fun times in my life. Children always have more fun than adults it seems and I have a large family to enjoy. Fun times are the best times, and they get us through the rough times.
My fun today, however, will probably be sitting on my sunporch, it’s warm out but very windy. The wind is going to bring some rain our way tonight and tomorrow.
I’ll be fine sitting in my enclosed patio listening to more acorns falling down. When they hit the metal roof it sounds like I’m under attack.
It’s Saturday and my day to cook for the weekend and on the menu is:
One Pot Chicken Alfredo
Makes 4 servings
1 Tbsp olive oil
2 boneless, skinless chicken breasts
2 Tbsp. flour
1 1/2 cups milk, divided
3 cloves garlic, minced
2 1/2 cups water
6 oz. linquine
3/4 cup Parmesan cheese
1 Tbsp. cream cheese
1/2 tsp ground pepper
Heat oil in large pan over medium high heat. Add chicken, cook until browned on both sides. Remove from pot and cut into 1 inch cubes.
Whisk together flour and 1/4 cup milk; set aside.
Add garlic to the pot stirring often for 1 minute. Add water and the remaining 1 1/4 cups milk. Bring to a boil. Add pasta, cover and cook stirring occasionally for 8 minutes. Stir in chicken and milk flour mixture . Continue to cook until the pasta is al dente.
Remove from heat. Add Parmesan, cream cheese and pepper, stir until the cheese is melted. Serve immediately.
One pot cooking makes clean up so much easier and this recipe sounds delicious.
This is my final reminder that Daylight Savings Time ends Tomorrow so don’t to forget to set your clocks back one hour before you go to bed.

Strange I had never heard of Guy Fawkes until this week. The Contemplated cat had it on her blog, now you. It is definitely an interesting part of history that I have missed.
The Alfredo recipe sounds delicious....

I wasn't aware of the history behind Guy Fawkes Day ... but really, who can resist a bonfire?! Yep, those falling nuts sure make a racket.
I have watched Midsummer Murders where there was a person in the wood stack. Pretty nasty, but I think he was rescued.
