THOUGHT FOR TODAY
Behind every small business, there’s a story worth knowing. All the corner shops in our towns and cities, the resturants, cleaners, gyms, hair salons, hardware stores —these didn’t come out of nowhere.

Sadly there are very few small businesses left in our small town. There used to local corner stores close by. I’d stop at them on my way to school to pick up a snack or some notebook paper on my way to school. Their prices were often higher than the big chain stores, but they were very convenient.
Most of the small businesses here, are restaurants that are family owned and operated. And I have eaten at a few of them. One of the best makes hamburgers with their own special sauce on them and the family loves to go there when they visit. That is in my pictures today. It’s been around for years and I used to go there with my mother for lunch. She loved the shrimp basket they served.
My youngest son is in business for himself as well as a nephew and niece of mine, so I guess they are small businesses and I will always support them in what they do. They are terrific in their fields.
I also shop at a local chocolate shop and our local farmers markets. They all need us to stay in business !
I’d usually be cooking for the weekend today, but it’s the day we are celebrating our family Thanksgiving gathering at DD’s house. So no cooking today only eating and enjoying my family.
I’m still sharing the recipe meant for today in case you might want to make it.
Apple Cider Pork Chops
Makes 6 servings
2 Tbsp olive oil
6 boneless pork loin chops
1 garlic cloves, minced
1 Tbsp. Dijon mustard
1 tsp. honey
1/2 tsp. apple pie spice
1/2 tsp ground pepper
1/4 tsp. dried thyme
1/4 tsp. salt
1 cup apple cider
1 Tbsp. plus 1 tsp cornstarch
2 Tbsp. water
Minced fresh parsley, optional
In a large skillet heat olive oil over medium heat. Brown pork chops on both sides.
Meanwhile in a small bowl, combine next 7 ingredients, stir in apple cider. Pour over pork chops. Reduce heat to medium low, cook covered until a thermometer inserted into pork chops reads 145 degrees. Remove chops from skillet, let stand 5 minutes.
In a small bowl, mix cornstarch and water until smooth, stir into cider mixture in the skillet. Return to a boil, stirring constantly, cook and stir until thickened. Pour over chops, sprinkle with fresh parsley if desired.
This is good served with egg noodles and green beans.
Today I’m thankful for music. Christmas music has started playing on the radio and I love it. The trip over to my daughters house reminds me of that old song, Over the river and through the woods to grandmother’s house we go. We go over the river on a bridge and the streets are tree lined.
As promised we are in the mid 50’s and have a mostly sunny day and it’s going to be a wonderful day celebrating with family!

Support your small businesses by shopping or eating there !
I love to support small businesses whenever possible. Sure, the amount we pay is usually higher, but not prohibitive ... and the customer service is top-notch.
I began listening to Christmas music for the first time yesterday afternoon. While I didn't hear "Over the river and through the woods ...." that's something we used to sing in grade school. It still makes me smile.
