Unfortunately this grandson’s birthday is another of my long distance celebrations but a card will be sent in the mail with lots of love and birthday wishes. Our little Lad is not so little anymore and is growing up fast. Most of these pictures are a couple of years old now. He is a middle child and has an older brother and sister and two younger sisters. I should l be seeing him next week when we have our family Thanksgiving and can give his some hugs in person !
DDH was a good role model for our family and in turn they are good role models for their children too. They are the men in my life now, my sons. Each of them is very responsible, caring and are all very hard workers. Their Dad taught them well. Not every child has good role models in their life and it’s important that they see good men in their life. Without them, things can go terribly wrong.
We’ve had a lot of birthday’s in our family this month and tomorrow I’ll be celebrating another for our Cutie Patootie. Her birthday is Monday, but her parents are having a dinner for her this weekend. For years she and her sister celebrated their birthdays together, but now they are getting older, each one wanted their own celebration day.
We may be seeing some snow overnight, and it’s still very cold out with the wind chill, it’s down in the teens and below. I hope there is not much snow and the roads keep clear for traveling. We shall see...
Today is my day to cook for the weekend and on the menu is:
One Pan Chicken Parmesan Pasta
Makes 4 servings
2 Tbsp. olive oil, divided
1/4 cup breadcrumbs
1 Tbsp, plus 1 tsp. minced garlic, divided
1 lb. boneless, skinless, chicken breast cut into 1/2 inch cubes
1 tsp. Italian seasoning
1/4 tsp. salt
3 cups chicken broth
1 1/4 cups crushed tomatoes
8 oz. penne pasta
1/2 cup shredded mozzarella cheese
1/4 cup shredded Parmesan cheese
1/4 cup chopped fresh basil
Heat 1 Tbsp. oil in an oven proof pan over medium high heat. Add bread crumbs and 1 tsp. garlic. Cook stirring until golden brown. Transfer to a small bowl and set aside. Wipe out the pan.
Heat remaining 1 Tbsp oil in the pan over medium high heat. Add chicken, Italians season, salt and remaining 1 Tbsp. garlic. Cook stirring frequently, until the chicken is no longer pink on the outside. Add broth, tomatoes and penne pasta. Bring to a boil and cook uncovered, stirring frequently until pasta is cooked and sauce has reduced and thickened, about 20 minutes.
Meanwhile position an oven rack in the upper third of the oven. Preheat broiler to high. When the pasta is cooked sprinkle with mozzarella over the penne mixture. Place the pan until the broiler until the mozzarella is bubbling and beginning to brown. Top with bread crumb mixture, Parmesan and basil.
I don’t have any fresh basil right now, so I’ll be sprinkling some dried basil on mine. This is an easy one pan meal and it sounds delicious to me.
I’m so thankful that I have the opportunity to be grateful this whole month. I love sharing all the things I am grateful for everyday. Remember the more grateful you are, the more you’ll have to be grateful for.
