Sorry, I’m late today, but once again my internet went out. I don’t know what the problem is, but this is the 3rd time in as many weeks, that I have had no service. They finally managed to get it going again so now I can send and receive messages again.
I love balloons so will definitely celebrate this holiday! No matter what the occasion balloons are a perfect gift. Most of the balloons I see are at birthday parties in my family. It’s a rare thing if there aren’t balloons for the party.
It’s my day to cook here at my house and on the menu is:
Vegetarian Taco Salad
makes 6 servings
2 Tbsp olive oil
1 onion chopped
1 1/2 fresh corn kernels or frozen thawed
4 tomatoes
1 1/2 cups cooked long grain brown rice
1 15 oz can black, kidney, or pinto beans, rinsed
1 Tbsp. chili powder
1 1/2 tsp dried oregano, divided
1/4 tsp. Salt
1/2 cup chopped fresh cilantro
1/3 cup prepared salsa
2 cups shredded iceberg lettuce
1 cup shredded pepper Jack Cheese
2 cups coarsely crumbled tortilla chips
Lima wedges for garnish
Heat oil in a large nonstick skillet over medium heat. Add onion and corn; cook stirring until onion begins to brown, about 5 minutes. Coarsely chop 1 tomato. Add it to the pan with rice , beans, chili powder, 1 tsp oregano and 1/4 tsp. salt. Cook stirring until tomato cooks down. Let cool slightly.
Coarsely chop remaining 3 tomatoes. Combine with cilantro, salsa and the remaining 1/2 tsp oregano in a medium bowl
Toss lettuce in a large bowl with bean mixture, half the fresh salsa and 2/3 cup cheese. Serve sprinkled with tortilla chips and remaining cheese, pass lime wedges and remaining salsa at the table. I like a dollop of sour cream on mine too.
I’m not a vegetarian, but I try to make Fridays meatless meals.
This taco salad sounds good to me. It’s to be close to 75 degrees today. Another amazing fall day. We don’t usually have temps like this in November!

Yeah you had me worried for a little while. Just found yesterdays entry. I love to watch a balloon artist, they amaze me. Also I was very surprised to learn there were rubber balloons in the early 1800s, WOW. Love the pictures as always.
