Today is National Parfait Day which is is the perfect snack, meal or dessert. Matter of fact, Parfait means perfect in French.
Although parfaits were originally served on decorative plates, today they are typically layered in tall thin glasses. There are also many variations on the original parfait recipe which originated in France in the 19th century.
American parfaits are made by layering, ice cream with granola, nuts, yogurt, fresh fruits and whip cream. Whip up your own version to celebrate today !

I do love parfaits and they do make an easy delicious dessert. I found an easy recipe for no bake Pumpkin cheese cake parfait to make for Thanksgiving.
2 oz. Packages Cream Cheese, softened
1 14 oz can sweetened condensed milk
1 15. oz can pureed pumpkin
3 tbsp. granulated sugar
1 tsp. vanilla extract
2 tsp pumpkin pie spice
1 tsp. ground cinnamon
1 tsp lemon juice
3 cups crushed gingersnaps
In a large bowl, combine cream cheese, pumpkin puree and sweetened condensed milk.
Add sugar, cinnamon, pie spice, and vanilla and mix until fluffy.
Stir in lemon juice and cover and refrigerate until slightly firm. Spoon gingersnaps in the bottom of parfait glasses and some pumpkin mixture. Repeat layers. Top with whipped cream and addition gingersnaps before serving.
I’m not going to make this in idividual glasses but in one big bowl and people can help themselves to however much they might want.
I’m going to be going out shopping today for the bits and pieces I need to finish up dinner for the next week and have made a menu to follow in order to do just that. My menu for next week is:
Leftover Turkey Salad Sandwiches.
Savory Pasta with Onions, Bacon and Greens
Grilled Tri-tip Sandwiches with Homemade BBQ Sauce
Chicken Tortilla Soup
Petite Crustless Quiche
Slow Cooker Sausage Cassoulet
On the menu for today is:
Cuban Stromboli
5 oz. whole wheat pizza dough
4 thin slices swiss cheese
4 slices salami
3 slices deli ham
3 slice deli turkey
1 dill pickle spear, quartered lengthwise
1 egg yolk
1 tsp water
1 pinch sesame seeds for garnish
2 tbsp. mustard for serving
Preheat oven to 450 degrees. Roll out dough on o lightly floured surface into a 12 by 6 inch rectangle. Layer on Swiss, salami, ham, turkey and pickle
Roll up starting at a long edge, roll up into a tight roll, pinching seams together. Place on baking sheet. Cut a few slits on top. Whisk egg yolk and water in a small bowl and brush over the top. Sorinkle with sesame seeds, if desired.
Bake until golden, about 15 minutes. Slice and serve with mustard, if desired.
This can also be served as a fun party snack that’s easy to make
I heard from DDIL#2 yesterday who has now been quarenteened due to the fact that her boss has been tested positive for Covoid 19. She has been working from home but had to go in and see her boss one day last week. Now the family will have to stay home. I’m praying none show any symptoms of the virus and keep well.
Today’s pictures are of some of my Thanksgiving decorations which will are destined to be put away this weekend. I’ll be getting out the ones for Christmas and getting ready for the holidays. Soon I’ll be sharing Christmas decorations instead.

That pumpkin parfait sounds yummy. I'll have to try it sometime.
You inspire me. I've always been a good cook, and I've always enjoyed cooking for my family and friends, but since Mike died, I haven't put much thought or effort into the food I fix for myself. When my daughter and son-in-law visit, I always prepare a nice meal, but when I'm alone, it seems like too much effort. And here you are... planning your week's menus in advance. Perhaps I need to follow your example.

YUMMMM on the pumpkin parfait. I'll definitely be making this -- at least for myself since Tom doesn't care for pumpkin. Until our ladies Bible study brunch the other day, I never tasted turkey salad. In fact, someone else asked, "Who made the chicken salad? This is delicious!" (Guess we've been living under a rock. LOL)
