ON THE BRIGHT SIDE
FOR SATURDAY, NOVEMBER 7TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!!

Today is National Cappunccino Day which celebrates the frothy coffee drink created in Italy in the 1600’s. It got the name from the Italian order of monks know as the Capuchins, a group that wore dark brown hoods, similar to the color of the drink.
Prepared with expresso, hot milk and a cup of foam, cappuccino is the customary way to jumpstart your day in Italy. In Western Europe,it’s just the opposite. Cappuccino is an after dinner drink.
Treat yourself to a kick of caffeine to celebrate today and have a cup or two of cappuccino !
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
Coffee is a hug in a mug.

I love cappuccino and keep some of the instant variety in the cupboard. My regular choice of coffee is black with no milk or sugar. But every now and then a cup of cappuccino hits the spot, especially when the temps turn colder.
The temps here this weekend will be in the low 70's which is perfect weather to me. It will be sunny too and very unusual for us in November. It’ll probably the last of of the nice weather we’ll be seeing and it’s to continue until Wednesday. .
This is Saturday which is the day I couk for the weekend and on the menu for today is:
Baked Pork Chops
serves 4
Cooking spray
1/4 cup flour
1 egg, slightly beaten
1 tsp. Dijon mustard
2/3 cup whole wheat panko breadcrumbs
1 tsp pepper
1/2 tsp salt
4 boneless pork chops
Preheat oven to 400 degrees. Place a wire rack on a large baking sheet and coat with cooking spray. Place flour in a shallow dish. Combine beaten egg and mustard in another small dish. Combine the panko and pepper in a third shallow dish.
Sprinkle salt over both sides of the pork chops. Dredge each chop in flour, Coat in egg mixture, then panko, pressing to adhere. Place on prepared rack. Coat pork chops with cooking spray. Bake until they are beginning to brown and are cooked throughout. A thermometer inserted in the center should register 145 degrees, 18 to 20 minutes.
Oven frying saves you fat and calories while producing chops that are crispy on the outside , yet tender and juicy inside. Serve with broccoli and baked sweet potato for a satisfying dinner.
This will be my dinner for today and tomorrow which is my day of rest.
I hope you all have a SUPER Saturday!

Love a nice cup of cappuccino now and then. Enjoy your yummy dinner and the beautiful weather. Have a great weekend Ma :)
I'm going to look for that instant cappuccino! Like you, I prefer my coffee 'straight black', but Winter days sometimes call for a bit of pampering our taste buds!
Your baked pork chop recipe sounds delish. I may have to try that in the Air Fryer. So far our luck's been 'hit and miss', but I so dislike turning on the big oven just for the two of us.
I love that Cappuccino, too! Not my every day drink but on occasion.
That's good to cook once on Saturday for both days. I do that, too.
I do like cappuccino. My hubby has used an instant one before and has enjoyed a cup now and then. The pork chops look yummy! Enjoy!
betty
I love your rooster cup!! I have one too that I should post:)
That recipe sounds great, MA. I'll try it soon for sure.
