Today is Mickey Mouse Day which celebrates the birthday of everyone’s favorite animated mouse. He is also one of the most famous cartoon characters and is the first to have a star on the Hollywood Walk of Fame.
This lovable character’s big screen debut was in Steamboat Willie on November 18th, 1928. He represents every thing Disney related and is one of the most recognized universal symbols of the 20th Century
Mickey Mouse loves a good adventure, along with his friends Minnie Mouse , Donald Duck, Goofy and Pluto. To celebrate today, watch a cartoon or movie staring this celebrated mouse!

One way to get the most out of life is to look upon it an adventure.

It wasn’t until the grandchildren came along, that I truly started to appreciate Mickey Mouse. We used to watch hours and hours of his movies. My favorite to date is Mickey’s Christmas. It’s one I’ve watched over and over and the grands always seem to delight in it.
Today is my day to go shopping for the week and I’ve made up my menu to go shopping by. Here is the menu for next week:
Spicy Touchdown Chilli
Creamy Chicken, Brussels Sprouts & Mushrooms One-Pot Pasta
Zucchini Pizza Bites
Slow Cooker Chicken Sausage with Cabbage and Apples
Cuban Stromboli
Crispy Roast Chicken and Carrots
On the menu for today is:
Rice and Black Beans
1 can black beans, drained and rinsed
6 cloves garlic, crushed
2 tbsp. dried oregano
1 bay leaf
2 tsp. olive oil
1 onion, chopped
1 red bell pepper, chopped
1 tbsp. cumin
1 jalapeño pepper, seeded and chopped
2 tbsp. balsamic vinegar
1 tsp salt
freshly ground pepper to taste
2 cups long gram brown rice
1 lime cut into wedges
Heat oil in a large skillet over medium heat. Add onion and bell pepper, cook stirring until softened . Add cumin and jalapeño; cook stirring 1 minute more. Stir beans into the onion mixture and vinegar. Season with salt and pepper to taste
Meanwhile bring 4 cups water and a tsp of salt to boil in a medium saucepan . Add rice and cover, reduce heat to low and simmer until rice is tender.and liquid absorbed about 20 minutes.
Serve beans over rice with lime wedges on the side.
The original recipe suggested cooking your beans from scratch but I used canned beans instead, making this is a quick and easy weeknight dinner.

I still love old Mickey! When I was a little girl my parents had a projector on which we'd watch 8mm home movies ..... even one of Mickey's early cartoons. It's still in a box somewhere; I should probably see if a collector might be interested.
I don't know if Disney's the "Happiest Place on Earth", but it sure comes close.
Grandson loved Mickey Mouse so we watched a lot of videos when I was keeping an eye on him. To me Mickey is always associated with Disneyland. I hope it can open again soon so that it will be "the happiest place on earth." Another great menu planned for the coming week Ma!
