Today is Veterans Day, which recognizes and honors all the military veterans who have served our country. Veterans Day is the anniversary of the signing of the armistice that ended WWI. President Wilson proclaimed the first Armistic Day in 1919. and President Eisenhower changed the name to Veterans Day in 1954. Similar celebrations take place across the world.
There are over 21 million veterans living in the United States. Today we honor all of those men and women for their patriotism and their willingness to serve and sacrifice for the common good of our country.
Celebrate today by saying Thank you to a Veteran.

My two favorite veterans are DS#2 and his wife who are now retired military. After over 20 years of service to our country they are now retired. My dad was a veteran of WWII and DDH was a veteran of the Vietnam war. They all served bravely and are lovingly remembered today in a very special way. But the pictures are of DS#2 and his wife.
Rememberig their service and sacrifice to our country. We will never forget and always remember. Thankfully all my veterans came home safely but many did not. The gave their all for our country.
We not only remember them but also others in our lives that have died and are no longer with us. Those we keep right close in our hearts where they will live forever. This is the day for remembrance.
For those of us here, life goes on and so I have another new recipe to share. On the menu for today is:
Apple Topped Ham Steaks
4 fully cooked boneless ham steaks
1 cup chopped onion
3 cups apple juice
2 tsp. Dijon mustard
4 medium apples, thinly sliced, red or green, your choice
2 tbsp cornstarch
1/4 cup cold water.
1 tsp. sage
1/4 tsp pepper
In a large skillet coated with cooking spray, brown ham steaks over medium heat and keep warm.
In same skillet, sauce onion until tender. Stir in apple juice and mustard, bring to a boil. Add apples. Reduce heat; cover and simmer until apples are tender. Combine cornstarch and water; stir into apple juice mixture. Bring to a boil; cook and stir for 2 minutes. Stir in sage and pepper. Return ham steaks to skillet; heat through.
I’ll be having this with a side of broccoli and a baked sweet potato today. It’s a very good dish to serve to guests in the fall. But Ill be eating it by myself. No guests today so I’ll also have leftovers.
This is also my day to go shopping so I’ve made up my menu for next week to do my shopping by.

BBQ Pork Sliders , using leftover pork roast
Minestone Soup with Dinner rolls
One Pot Chicken and Rice with Vegetables
Rice and Black Beans
Homemade fish sticks
Slow Cooker Salsa Chicken
