I think we are all unique and special in our own way. There are two alike. We all are different and have something unique to share. I don’t think I’m particularly talented, but I like to share what I do every day. Letting you all know what’s going on at my house is a pleasure for me. I started doing this shortly after the kids left home in order to stay connected with them and that grew into sharing it with others too. I think of it as blooming where I’m planted. Using my talents with the computer to do what I like best. Connecting with family and friends.
Sharing what my family is doing makes me happy. They are the best part of me. Over this past weekend, I discovered that#1 got married. She is my first grandchild and the first to get married so that is what the pictures are of today. They kept their wedding celebration on the quiet side due to the pandominc, but hope to have a big celebration after all this is over; I hope to be able to be at that one !
Thankfully I have the internet to keep me connected and find out what’s going on in my family. I joined FB just for that reason. There are many pictures I’d not be able to share if I didn’t borrow them from social media.
I’m also becoming very talented in making new recipes too and on the menu for today is:
Creamy Chicken, Brussels Sprouts & Mushrooms One-Pot Pasta
Makes 5 servings
8 oz. whole wheat linguine or spaghetti
1 lb. boneless chicken skinless chicken thighs
4 cups sliced mushrooms
2 cups sliced brussel sprouts
1 onion, chopped
4 cloves garlic minced
2 tbsp. Parmesan cheese
1 1/4 tsp. thyme
3/4 tsp rosemary
2/3 tsp. salt
4 cups water
2 tbsp. chopped fresh chives
Combine pssta chicken, mushrooms, brussel sprouts, onion, garlic, cheese, rosemary and salt in large pot. Stir in water, Bring to a boil over high heat. Boil, stirring frequently, until pasta is cooked and the water almost evaporated. Remove from heat and let stand for 5 minutes. Serve with a sprinkling of chives.
I love one pot meals that include everything you need for dinner using only one pan. By cooking the pasta along with everything you get delectably creamy results. I used chicken breasts instead of thighs because it’s what I had on hand.
