Today is World Peace Day which is a sign of harmony characterized by the lack of violence, conflict behaviors and the freedom from fear of violence. Commonly understood as the absence of hostility, peace also suggests of a healthy or newly healed interpersonal relationships., prosperity in matters of social or economic welfare, the establishment of equality and a working political order that serves the true interests of all.
Many different theories of peace exist in this world of peace which involves conflict transformation , disarmament, and cessation of violence. The definition of peace can vary with religion, culture and subject of study.
The United Nations General Assembly declared this day devoted to the strengthening ideals of peace through observing 24 hours of non violence and cease fire. Celebrate the day by spreading compassion, kindness and hope in face of the pandomenic. Stand together against attempts to use the virus to promote discrimination or hatred.

I’m sending out smiles and wishing that peace might be with you all today. . Life is too short to be anything but happy! We get to choose our attitude every day and for me I choose to be peaceful. It all begins with each of us. Peace begins with you and me. Let’s be kind to one another. When we give love, we get love in return.
The way we treat others makes a big difference and I want to make a difference in this cruel old world and show peace to others.
We can all do a little or a lot, being kind is never a waste of time.
On my menu for today is:
One Pot Chicken and Rice with Vegetables.
Makes 4 servings
8 chicken thighs
1 tsp salt
1 tsp black pepper
3 Tbsp. butter or olive oil, divided
2 carrots, diced.
2 celery stalks , diced
1/2 cup chopped onion
2 garlic cloves , minced
1 1/2 cups brown rice
3 cups chicken broth
6 sprigs fresh thyme
1 cup frozen peas
Sprinkle thighs with salt and pepper. Set aside. In a large pot with lid, over medium high heat, melt butter or olive oil. Add carrots, celery and onion. Saute for 5 minutes, stirring frequently, until onions are translucent and veggies begin to sweat.Add the garlic and sauce 1 minute, until fragrant. Remove the vegetables from the pot and set aside.
Return the pot to the stove top and melt 1 tbsp of butter. Once melted add chicken thighs, skin side down. Cook for 10 minutes until they are slightly brown and crispy. Turn the chicken over with tongs and cook 5 minutes.
Add the vegetables back to the pot followed by rice broth, and thyme. Make sure all ingredients are submerged in the broth.
Bring the broth to a boil . Once boiling reduce heat to a simmer and place the lid on the pot. Simmer 30 minutes until the rice has absorbed the broth and is fluffy and the chicken is no longer pink. Before serving add the peas and stir to combine. Allow peas to rest in the rice until soft.
Serve warm.
This meal has everything you need in one pot. It’s quick, family friendly, nourishing and inexpensive.

MLK, Jr. was certainly a visionary... gone too soon.
I like that recipe, Ma. I wonder if one could substitute frozen green beans for the peas. Son doesn't like peas but it sounds like a good recipe to make when family comes over.
The world certainly could use a lot more peace these days! Let it start with us, right Ma?
