Today is National Vanilla Cupcake Day which celebrates a delightful treat than can be found at children’s birthday parties, weddings, and everything in between.
Whether they are store bought or homemade, they are a delicious dessert for people of all ages to enjoy. Cupcakes are called fairy cakes in England and are the perfect size for party of fairies to enjoy.
Celebrate today by making cupcakes for your family.

I happen to have a grandson that prefers vanilla cupcakes over chocolate. He always ask for vanilla cake for his party. There are many who prefer chocolate, but vanilla is his favorite choice. Speaking of parties, we have one coming up this weekend for DS#5’a two girls. They were not born on the same day but they both have November birthdays so they always have their party together. I don’t know if there will be cupcakes or not but there’s sure to be a lot of fun going on. This year with the pandomenic going on it won’t be the usually big party that they always have so we are trying to make it special for them in other ways. It’ll just be our family gathering and not all their friends too.
When my children were growing up that is the way it usually was at our house. Mostly family. I don’t think it was any less special for them.
The cupcake pictures I’m sharing today are from my visit to Texas to see DS#2 . They are still the best and most expensive ones I’ve ever bought.
I know I’ve shown these pictures before but I don’t seem to have many other cupcake pictures to show you.
Today on my menu is another new to me recipe :
Maple Roasted Chicken and Acorn Squash
1 medium acorn squash
4 carrots, chopped about 2 cups
1 onion, cut into 1 inch pieces
6 chicken thoughts
1/2 cup maple syrup
1 tsp. salt
1/2 tsp pepper
Preheat oven o 450 degrees. Cut squash lengthwise in half. Remove and discard seeds. Cut each half crosswise into 1/2 inch slices, discard ends. Place squash, carrots and onion in greased 13 by 9 inch pan. Top with chicken, skin side down. Roast 10 minutes.
Turn chicken over, drizzle with maple syrup and sprinkle with salt and pepper to taste. Roast 25 to 30 minuets longer until a thermometer inserted in chicken reads 170 to 175 degrees and vegetables are tender.
Makes 6 servings
This is a one pan dinner, simple and easy. Enjoy !

Those are still the most beautiful, delicious looking cupcakes I've ever seen! Enjoy the party coming up this weekend :)
I've never tried making acorn squash ... yet between you and Martha, I'm ready to give it a try! Indulging in those cupcakes had to have been a great experience. Someday I hope to get to the Silos in person.
Those are so enticing! Vanilla cake with vanilla icing is my absolute favorite.
I like vanilla over chocolate for cupcakes too (and cake). Yummy on that recipe! That is going to be made soon here though I've never made anything with acorn squash. I bet you enjoyed dinner!
