ON THE BRIGHT SIDE
FOR THURSDAY, NOVEMBER 5TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

THOUGHT FOR TODAY
This day sounds somewhat like our 4th of July with all the fireworks going on. They are beautiful but also very noisy too. I love to watch them but they seem to go on for days before the holiday and days afterward too.
;
I do have some English ancestors so I suppose this could be a holiday for me, but I won’t have any fireworks here..
On the menu here today is nothing fancy but is quite simple:
Baked Chicken Thighs and Potatoes
Makes 3 to 4 servings
6 to 8 chicken thighs
1 lb. potatoes, peeled and quartered
1 red onion, quartered
2 tbsp olive oil
2 tsp minced garlic powder
1/2 tso cayenne chili powder
2 tbsp. chopped fresh scallions
salt and pepper to taste
preheat oven to 400 degrees . Lightly oil a rimmed baking sheet to coat with non stick spray.
In a large bowl whisk together thighs, potatoes garlic powder and chili powder. Season to tate and mix well with hands to help spice penetrate the meat and potatoes.
Place chicken and potatoes and red onion in a single layer on to the prepared baking pan. Add a drizzle of olive oil.
Roast in the preheated oven until chicken is completely cooked through.about 25 to 30 minutes. Then broil for 2 to 3 minus to make it crisp.
Remove from oven. Cover with foil and allow to rest 10 minutes Serve hot, garnish with chopped scallion and drizzled with lemon juice.
We have a couple more nice days coming our way this week. It’s been a nice November so far here in Ohio.
The pictures today are from various fireworks from the 4th of July.
I hope you all have a GREAT day. Happy Thursday!

Enjoy your dinner and the nice weather!
That chicken dish sounds delicious!
Regarding the virus alert - I have a good strong Firewall and Virus protection and it just updated this morning. My site is safe but it is alarming when that warning pops up. For awhile, everywhere I went I got the warning. Before proceeding on to the blog site I was heading for, I saw a place where I could ask them to check their settings. That I have visited whatever site I was going to often and explained what it was. Later I received a notice that they had updated their recommendation to Caution. I supppose you could reas the blog through an email subscription and bypass the actual site.
With all the awful things that can go on in the Internet - you would think that our blogs would not pose a threat to anyone!!
And thank you for telling me about the warning...
Tom had chicken thighs today ... deep fried, from the gas station, but said they were delish. I, too, enjoy my one-pot meals.
Wonder why I never heard of Guy Fawkes Day? But any day's a great day to celebrate something!
I had heard the name Guy Fawkes but now I know his story! This chicken recipe looks good. I'm going to make it but substitute the thighs with chicken breasts.
betty
I had not hear of Guy Fawkes Day but was interesting. Too bad we don't punish conspirators like that today. Bet you dinner was delish. You are doing good on your healthy meals.
