This DIL’s birthday celebration is another long distance one for me, so my thoughts and wishes will going our in the mail with a card to wish her every happiness. I won’t be seeing her until Thanksgiving so I’ll have to catch up on the congratulations then. I do have chicken on the menu for today but not in the form of soup, instead I’ll be having:
20 minute Chicken Enchiladas
Makes 6 servings of 2 enchiladas each
1 cup chopped onion
1 cup chicken stock
1 tbsp. Flour
1 1/2 tbsp. chili powder
2 tsp. cumin
3/4 tsp garlic powder
1/2 tsp crushed red pepper
1/4 tsp. salt
1 16 oz can tomato sauce
3 cubs shredded rotisserie chicken breast
1 15 oz can black beans, rinsed and drained
12 6 inch corn tortillas
Cooking spray
3/4 cup shredded Mexicn blend cheese
1 cup chopped tomato
1/4 cup chopped fresh cilantro
6 tbsp. sour cream
Preheat broiler to high. Combine first 9 ingredients in a saucepan , stir with a whisk. Bring o a boil over high heat; cook 2 minutes or until thickened. Reserve 1 1/2 cups sauce mixture. Add Chicken and beans to pan, cook 2 minutes or until chicken is thoroughly heated.
Stack tortillas; wrap stack in damp paper towels and microwave on high for 25 seconds. Spoon about 1/3 cup chicken misture in center of esch tortilla; roll up. Arange tortillas, seam sides down in bottom of a 13 by 9 inch baking dish coated with cooking spray. Top with reserved sauce and cheese.Broil 3 minutes or until chess slightly browned and sauce is bubbly. Top with tomato and cilantro. Serve with sour cream
Enchiladas are a surefire family favorite and can be a labor of love. This version takes only 20 minutes from start to finish. You can use leftover ingredients to build nachos on a baking sheet. Serve the enchiladas with a salad of fresh orange, avocado and crisp lettuce.
