Today is Thanksgiving which is a special celebration typically full of family gatherings, holiday meals, and giving thanks. It is a time of roasted turkeys, cranberry confections, cornbread stuffing, piping hot pumpkin pies, football games and holiday parades.
The 3 day festival that is now hailed as the first Thanksgiving took place in the village of Plymouth in 1621. Governor William Bradshaw organized a feast to celebrate the Pilgrims first successful corn harvest
Those in attendance included the Wampanoage chief Massasolt. Historians show the the Mayflour's sugar supply had run low, so the meal did not feature any pies, but one record indicates that four men were sent on a fowling mission which may very well have resulted in a turkey.
Presidents Washington, and Monroe proclaimed national Thanksgivings , but the custom soon fell out of favor, Then in the 1820’s, Sarah Josepha Hale began a campaign to reinstate the national celebration and in 1863 President Lincoln proclaimed a Thursday in November as a National day of Thanksgiving. The holiday has been celebrated ever since.

Happy Thaaksgiving everyone! I do appreciate each and everyone of you and am very thankful for you I’ll be spending the day home alone and will be cooking, but not a turkey. We’ll be having that on Saturday when we celebrate together with what family that can come. Today I’ll be having
Slow Cooker Chicken Sausage with Cabbage and Apples
Serve 6
1 medium head green cabbage cored and cut into 16 wedges
2 Granny Smith apples cored and cut into 1 inch slices.
1/4 tsp salt
1/4 tsp paprika
1/2 tsp black pepper
2 1/2 tbsp. olive oil
1 13 oz package smoked chicken sausage cut into 2 inch pieces
3 tbsp. apple cider vinegar, plus more for serving
1/4 c chicken stock
1 bunch fresh flat leaf parsley
Toss together cabbage apples, salt, paprika, pepper and 1 1/2 tbsp. olive oil in a slow cooker. Cover and cook on High until vegetables are tender. 5 to 6 hours
Heat the remming tbsp. of oil in a skillet over medium high heat. Add the sausage and cook turning to brown on all sides. Remove from heat, add 3 tbsp. of the vinegar. Return to heat and cook until evaporated. Add the stock to the skillet, bring to a boil, scraping to loose the browned bits from the bottom of the skillet. Spoon over the vegetable mixture in the crock pot.Cover and cook on high until the flavors come together, about 1 hour.Garnish with fresh parsley leaves, if desired and serve with splash of apple cider.
The cabbage comes out tender without being mushy and gives the slow cooker chicken sausage a slightly sweet flavor. A splash of vinegar at the end perks up the meal with a bit of acidic brightness. There are several varieties of smoked chicken sausage.
We can all only do what we need to do to keep safe and healthy, but whatever you do, I wish you a Happy Thanksgiving !

Loved Erma Bombeck! Fortunately, I only had to reheat the smoked brisket to bring along to my son's. DIL and her sisters did everything else, and what a spread it was! Truly, there's always something for which to give thanks. I'm very grateful to count you among my circle of friends!
