Today is National Pickle Day which has been a popular food for thousands of years In 2030 B.C. cucumbers were imported from India to the Tigris Valley. There they were the first preserved and eaten as pickles .
In ancient Egypt, people cunsumed pickles for their nutritional value and because they were thought to enhance beauty. Cleopatra attributed her good looks to her full diet of pickles. Centuries later, Napoleon believed that pickles offered health benefits for his armies, so he offered a huge cash prize to anyone who was able to preserve them safely.
Today we honor the culinary history of pickles. This versatile vegetable can be enjoyed as a condiment, snack or side dish. Stock up on your favorite kind of pickles and celebrate today !

I love pickles and for years they’ve been on my table as part of a meal. They are also good on sandwiches too. But for today, no pickles are on the menu. I’ll be cooking for the weekend. Well actually I’m not having dinner at home, but going to the party for my granddaughters, but Sunday dinner will be done and ready just to heat up tomorrow. I’m fixing:
Slow Cooker French Dip Sandwich with Carmalized Onions
3 to 4 lb round roast, trimmed
1 tbsp.garlic, minced
1 Tsp. rosemary
1 tsp. thyme
1 tsp salt
1/2 tsp black pepper
2 to 3 14. oz cans of beef broth
1 tsp. Worcesthershire sauce
10 whole peppercorns
1 bay leaf
1 onion, cut into chunks
for the Caramelized Onions:
1/2 tablespoon olive oil
3 onions, thinly sliced
1/2 tsp. salt
For the peppers:
1 red bell pepper, cored, seeded and sliced into strips
1 green bell pepper , cored, seeded and sliced into strips
For the sandwich:
Provolone or Mozzarella slices
whole wheat baguettes or rolls, cut into 2 oz. pieces
In a small bowl mix garlic, rosemary, thyme, salt and pepper. Rub the spice mixture onto all sides of the roast, then place in the slow cooker . Pour the broth onto the side of the roast then top with onions.
Add the Worestershire sauce, peppercorns and bay leaf to the broth. Cover and cook until the meat flakes easily apart with a fork. about 9 to 12 hours depending on he size of your roast.
An hour before the meat is done, prepare the onions and peppers.In a large nonstick skillet heat oil over medium heat. Add onions and salt and cook until golden, stirring often, reducing heat as needed if onions are burning or browning too quickly, 30 to 35 minutes The onions should turn golden and the flavor should be sweet.
Transfer to serving bowl, then add the peppers to the skillet and cook stirring often, about 10 minutes.Remove the meat from the slow cooker to a cutting board and shred with a fork or slice with a knife.
Strain the broth through a sieve then place in a gravy separator to remove any fat. Pour 1/4 cup of broth into small individual ramekins to serve.
Preheat oven to broil. Split the bread open and top with 2 ounces of beef, top with onions, peppers and cheese. Place on a plate for serving with broth for dipping.

Now this is the recipe I was waiting to see! I was planning to do a Mississippi Pot Roast for son's birthday next month ... but when I fixed it last weekend the sodium (from the dry mixes) made it almost too-much to enjoy. 'Think I'm going to try yours tomorrow and see if that's not a better choice.
Hope today's birthday party is great fun for all!
PS - Once or twice a year I'll make a (small) crock-pot of caramelized onions and freeze in individual baggies for later use.
