Today is World Freedom Day which commemorates the fall of the Berlin Wall in 1989 and recognizes the end of Communist rule in Eastern and Central Europe. World Freedom Day was declared a national holiday by former President George W. Bush and has be observed by the United States since 2001. Ronald Reagan is often celebrated on this holiday as president during the Cold War and the collapse of the Iron Curtain.
Today acknowledge and celebrate the freedoms that you are granted as a citizen of a free and sovereign nation. At the same time recognize the many people in the world you are still fighting for their own freedoms and liberties.

I am very proud to be an American and to live in this great county. I appreciate all the freedoms we do have and am also thankful for those that help keep them. Freedom is never free and lots of people sacrificed their lives to make sure we are a free country.
For a couple more days this week we are enjoying some beautiful fall weather. I’d guess you could say this is our Indian Summer. It’s been great to open the windows and doors and let in some fresh air.
On the menu today is a casserole called :
Italian Hot Dish
1 1/2 cups uncooked multigrain bow tie pasta.
1 lb. lean ground beef
1 cup sliced mushrooms, divided
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tsp. oregano
1/2 tsp garlic powder
1/4 tsp onion powder
1/8 tsp pepper
1 can, 15 oz. tomato sauce.
1/2 cup shredded mozzarella cheese
Preheat oven to 350 degrees. Cook pasta according to package directions for al dente, drain.
Meanwhile in large skillet coated with cooking spray, cook and crumble beef with 1/2 cup mushrooms, onion and green pepper over medium high heat until no longer pink. Stir in seasonings and tomato sauce. Bring to a boil, Reduce heat simmer covered 15 minutes.
Place pasta in an 8 inch square baking dish coated with cooking spray. Top with meat sauce and remaining mushrooms. Sprinkle with 1/4 cup of mozzarella cheese 1 tbsp. Parmesan cheese
Bake covered 35 minutes. Uncover; sprinkle with remaining cheeses. Bake until heated through and cheese is melted.
I’ll be having this along with a tossed garden salad on the side today.
