Today is also National Fast Food Day which honors the concept of ready cooked food for sale . It is attributed to the Ancient Romans. In many cities street stands or thermopoliums, small pub like shops offered hot sausages, bread and wine to patrons on the go. Thousands of years later in 1867, the first American fast food restaurant opened in New YorK. It was a hot dog stand on Coney Island.
Today fast food is an American staple. There are over 300,000 fast food restaurants in the United States alone, making it nearly impossible to drive down the road without going by at least one fast food chain restaurant.
In 1970, U.S. consumers spent $6 billion on fast food. Thirty years later in 2000. U.S. consumers spent $110 billion. Take part in this tradition and enjoy National Fast Food Day.

This DIL’s birthday is another one of my long distance celebrations so I’ll be lighting my birthday candle and putting a card in he mail to wish her a very happy birthday.
Although there are several fast food restaurants nearby, my favorite kind of fast food is the leftovers I can take out of the fridge and heat up quickly in the microwave.
On the menu for today is
Minestrone Soup with dinner rolls
Makes 8 servings
4 carrots, peeled and chopped
3 stalks celery, chopped
1 red onion chopped
3 cloves garlic minced
2 cups fresh green bens, ut into 2 inch pieces
2 15 oz cans red kidney beans, rinsed
2 15 oz cans dice tomatoes, undrained
6 cups vegetable broth
2 tbsp. Italian seasoning
1 tsp crushed red pepper
2/3 tsp salt, divided
1/2 tsp. pepper
1 zucchini, chopped
4 oz. whole wheat pasta, elbows or other small pasta
1/2 cup grated Parmesan cheese.
Combine the carrots celery, onion, green beans, kidney beans, tomatoes, broth, Italian seasoning, crushed red pepper, 1/4 tsp salt and pepper in a slow cooker. Cover and cook for 6 to 8 hours.
Stir in pasta, zucchini, and remaining 1/2 tsp salt. over and cook on low until pasta is tender, 15 to 20 minutes more. Serve immediately, topping each serving with about 1 1/2 tbsp. Paremsan
Serve with garlic dinner rolls.
It’s to be cold today with temps barely reaching mid 40 degrees so it’s a great day to have a bowl of hot soup.
